Quiet hands are important so you don't interfere with the horse's mouth. Keep your shoulders relaxed and open your elbows in the rising phase of the posting trot and close your elbows in the sitting phase.
Another helpful tip to keeping your hands quiet is to rest your pinkie finger on your horse's mane to help stabilize your hands.

My arms are kinda out of proportion so when I rise, my hands barely reach the horses neck so I often have to open my hands to keep my hands down and the reins at the horses neck. I’ve tried riding less but I still have the same problem

Would this apply for a sitting trot, too? I ride Western. My trainer keeps saying I'm choo-chooing my hands and I'm trying to figure out how to not do that.

If you have open fingers and the horse throws his/her head up you have a possibility of breaking your fingers, so a tip "promoting" open fingers is basically fixing a problem with another problem.

Mare Moments - Hi! Thanks for watching my video and for your comment. Your concern for safety for a rider with open fingers is legitimate. Thank you for helping other riders to look out for each other. If you watch the entire video, you will notice at approximately 2:28 I do say exactly the point you brought up... that “I always tell my students to ride with softly closed fists and that riding with open fingers can be unsafe but this tip is just a tool to teach a rider to know where their hands are while they are trying to learn”. Really the danger would not be jamming or breaking your finger if the horse throws their head up... that wouldn’t do anything. The danger would be if the horse badly trips and the rider loses their balance forward on to the horse’s neck, then the rider might injure a finger. Again, I really appreciate you taking the time to watch my video, your comment and helping to look out for the safety of the rider. ❤️
