Macaronage is THE most important stage of making macarons as it can make the difference between nicely developed shells or a big pile of mess on your baking tray.
This is a great way to learn the correct consistency that you need for your macaron shells as you can watch how the batter changes right in front of your eyes. I know that a lot of people are intimidated by macarons but if you take the time to learn each of the steps and understand the techniques used, they really are achievable. It's definitely worth the effort.
