It has Carrots, Walnuts, pineapples and the right number of spices to give it that carrot cake touch! It also has a delicious, creamy and non-runny cream cheese frosting to go along with it! Note- Changes have been made to the amount of Unsalted butter you need. In the video it says 5 sticks of unsalted butter. You will need 4 sticks unsalted butter at room temperature. 1 stick melted for the cake batter and 3 sticks to make the frostings.

Hi Charlie, I made a carrot cake over the weekend using your recipe and baabee it was moist and delicious. My testers said it wasn't sweet and the moisture was perfect. Another cake under my belt...super delicious 😋

Charlie, I made a version of this Carrot Cake for Easter. I modified the recipe by adding a 1/2 cup of sour cream. Oh my. My family loved it. I haven't baked a cake from scratch or the box cake mix in 30 years. Thanks for the restored confidence.❤️

Charlie Andrew - your Carrot Cake from Scratch with Cream Cheese Frosting! I want to give you a 10 this was my first time making it. Your instruction were so simple to follow. As you said it was so moist and yummy! Family and friends love it. I do not like frosting but LOVE cream cheese frosting so did my family Charlie you Rock it! Nice work Charlie. I searched "carrot cake made from scratch" and yours was one of many, but when the words N'awlins jumped out of me I knew yours would be the best. I have traveled the world, and N'awlins has the best food on the planet, although there are a couple of places in Italy that are close. I was lucky enough to be stationed there some 25 years ago for 4 years while in the USCG and got to live an amazing culinary experience.

Yummy Charlie!!! I want to hop on a plane and come straight to you shop for a piece of carrot cake!!!!! Yummmmmy! I love the walnuts and pineapple in the cake. This is a pleasant surprise if you have never had these in a carrot cake. This is how my momma made carrot cake! Sometimes she would put in a cup of raisins, gooseberries, golden raisins, or other dried fruit whatever was on hand. It was so delicious! Thank you for the detailed recipe! Your recipe reminds me of my Mommas recipe!

I appreciate the compliments Carrie. That is good to hear! If you're tired of the pumpkin pie I do have a recipe for Cream cheese filled pumpkin bread and I also have a video on how to make Sweet potato pound cake. You could also substitute the Sweet potato with the pumpkin and add 1/4 to 1/2 teaspoon of the additional spices like the ginger and cloves and you'll be all set. Hope this helps. Thank you for the video. It was very useful. I am very new to baking cakes. However, on my first attempt I discovered an easy way to put the nuts on the sides of the cake that I like to share with. Get a flat cardboard (size of a playing card) and hold the end at an angle to touch the bottom of the cake and the top to be slightly open. Then slowly pour a bit of nut at a time and go round the cake. As you go round each time tighten the angel so the nut are poured higher. It is quick and easy. and works well.

I love carrot cake & banana but cake. Try it this way. Replace walnuts with black walnuts, raisins with dried cranberries & add some lime juice & zest. It comes out so good. Little tangy, yet sweet. The lime accentuates the carrots & cranberries. I also want to replace pecans with black walnuts for pecan like pie but haven't done it yet.

Not sure if I would like it that way! I like black walnuts but I'm not sure if they would go well with the carrot cake. Everyone has their own tastes for things. Cranberries would be a nice substitute. I may give it a try soon IF I can! Thanks!

I've watched lots of videos on carrot cake recipes but this one has the ingredients with the same measurements I imagined. You use white and brown sugar which I wanted to do and butter plus oil. I'll be making this tonight for my son's birthday tomorrow. I like videos that are precise yet informative like your's

@@CharlieTheCookAndrews I should have followed the recipe temperature of $325° F like you said. I baked it at 350° F. Just didn't think 325° was hot enough to make the cake rise. It probably would have been fine if I had taken it out 5 minutes sooner. Anyway my cake was a bit dry but everyone loved it. My skinny daughter-in-law who hardly eats dessert had 4 pieces. 😋
