How to Make a Legit Cajun Gumbo

This recipe is my favorite way to make gumbo. There are many ways to make one but if you make this one, you will have a good representation of real cajun gumbo.

🍗Gumbo Recipe🍗
1 Whole Chicken cut into 8 parts
1 Green Bell Pepper
1 Yellow Onion
3 Stalks of Celery
4 Garlic Cloves
1.5 tsp Smoked Paprika
1.5 tsp of Chili Powder
2 tsp Cayenne (1 tsp for flour and 1 tsp for roux)
1 tsp Ground Black Pepper
1.5 tsp File Powder
2 tsps of garlic powder
4 tsp Salt (for seasoning chicken)
1 tbsp Pepper (for seasoning chicken)
1.25 cups Canola Oil
1.5 cups All-Purpose Flour (1/2 cup for dredge and 1 cup for roux)
12 cups of Chicken Stock
1 pound of Andouille Sausage
You want to have everything prepared ahead of time. Because once you start the roux its too late. Chop bell pepper, onion, and celery and place in a bowl. Mince garlic and place in a separate bowl. In a separate bowl add smoked paprika, chili powder, cayenne, black pepper, and file. In another bowl, mix flour, cayenne, and garlic powder.
Break down the chicken into 8 pieces. Season well with salt and black pepper. Dredge chicken in 1/2 cup of seasoned flour. Heat 1 1/4 cup of canola until 350 degrees. Fry chicken in batches for 2-3 minutes per side. Fry chicken until golden brown. Let chicken cool on a cooling rack and then place in the fridge (the chicken is still raw, so it needs to be refrigerated.) With your oil still hot, add in the rest of the seasoned flour in batches. Whisk and make a dark roux.
Once the roux is dark, add in chopped vegetables and seasonings. Stir and cook for 10 minutes (or until tender). Add in garlic sand cook for 1 minute. Add in chicken stock 1 quart at a time. Let simmer for 1 hour. Stir the pot and skim pooled oil every so often. After 1 hour add chicken into the pot and simmer for one more hour.
After one hour, remove all chicken from the pot and remove the skin from the meat. Pull meat from the bones and chop into bite-size pieces.
Serve with rice. And enjoy.
🥔Potato Salad Recipe🥗
2lbs Yukon Gold potato (or any waxy potato)
6 Hardboiled Eggs
1 Cup of Mayonnaise
2 tbsp of Sweet Pickle Relish
1 tbsp Creole Mustard
1 tbsp Yellow Mustard
1 tsp Salt
Creole Seasoning
Boil 2 lbs potatoes until fork tender. Boil 6 eggs until hardboiled. Chop eggs and mash with potatoes. Add 1 cup mayo, 2 tbsp relish, 1 tbsp creole mustard, 1 tbsp yellow mustard, and season with salt and creole seasoning for taste.

I always was interested in US southern recipes. They just sound very interesting sometimes. Here in Germany you cannot really get it a restaurants and of course nobody knows how to make it. Three of my neighbors and me have this tradition that we meet every Friday at another house for dinner. I will try this when it‘s my turn again. So thanks, I‘ll definitly try it.

Looks delicious!! I’m hoping you’d do a shrimp etoufee recipe and a seafood gumbo .. Being from California gumbo was huge ; especially from late November to about March for Dungeness crab season.. And there were lots of Louisiana natives who settled in California that came from different regions and all had a different spin on gumbo! One guy from my church use to put hard boiled eggs in his... Yuuuuuuuuuummmy.. Thanks for sharing ..

I make mine just like this, but for time and ease I use a rotisserie chicken added at the very end. If I want a little more special, I add shrimp. I also like thyme in mine. I'll have to try potato salad with it, I make cornbread with ours. Now I'm hungry!

Rotisserie chicken is how I make my quick version. Sometimes I prefer it over this version (especially in the summer) since it’s not as heavy. Thank you for commenting!

I am cooking this now, on my last hour of the cook. Potato salad ready to go. I keep coming back to the video to reference. Can't wait to try it, my house is smelling so nice! I love your video style. One small critique is your written instructions don't inform when to add the spices or garlic, which had me nervious as I realized as I had alredy started the roux. I had memorized it properly watching the video before I began and thankfully did it correct. Thanks again and I look forward to seeing what you do in the future.

I only had to go to 17 stores to find file powder in Michigan, but I finally made this and it was fabulous!! My family loved the flavors, even my 18 month old granddaughter enjoyed it! Next time I will have to cover my smoke detector with aluminum foil when I make that roux! 😂 Thank you for all you do!!!🙏

@@RueCajunit was so much fun! I hope this makes you laugh, but it took 3 tries to get my roux right! First time I burnt it bad because I didn’t move the pan off the burner on my electric stove when I was tending to my burns lol The second time the smoke detector went off and I left it to open windows and turn on fans Third time, all windows open, fans on, I gloved up and wrapped my smoke detector with foil and it worked!!! My mom didn’t raise a quitter!! Seriously I learned a lot and it was so worth the time! Its getting pretty chilly here and this is perfect for our cold weather, it really warms my heart!! Thank you again!🥰🥰

Came here from the roux video of chef Jean Pierre, love your channel and this gumbo looks like dynamite! I will definitely have to try this some time! 😁 Hopefully I'll be able to find the sausage here, bc I'm guessing its not very well known where I live 😅 (Netherlands) but usually the internet really helps out, most things can be found and ordered online these days 👌

Count me as another referral from Chef Jean-Pierre. I love your videos! I have a question on the fried chicken: I'm assuming that frying the chicken even though you subsequently remove the skin imparts flavoring to the gumbo - is that right? Thanks much and again, great videos!

I have never had fried chicken gumbo before so that is a new one on me and I am from the heart of Cajun country so it is interesting. Thank you for not adding seafood with the chicken and sausage!! Or adding tomatoes to it. Doing all of that is more Creole than Cajun.

The fried chicken is an extra step and of course makes it delicious. But to be honest, I usually do a "quick" gumbo and skip the frying or even use a rotisserie chicken.

I got a bit confused. Did you put the potato salad right into the bowl with rice on top and then add the gumbo? Or is it just rice in the bowl with potato salad separate?

It is separate. Some people (like my wife) put it in a bowl to the side but I just put it all in the same bowl.

How come in the US, people use the celery Stalks, but in Central Europe we usually use the celery root for like a soup base?

Does gumbo technically change to something else if you add okra? All my favorites gumbos have had okra, but now I'm wondering if that's technically considered something else.

No it’s still a gumbo, more of a preference. I like seafood gumbo with okra but usually leave it out for chicken and sausage mainly because my kids don’t like.

Haha yeah, yeah. Kind of blasphemous for some without. Especially since gumbo means okra. But I think like most recipes and especially family recipes, it kind of becomes what you make it and how you like it. I love okra but my kids don’t so I started leaving it out.

It seems t me like the deep frying of the chicken was entirely unnecessary?

It may seem like that but by frying the chicken you are adding flavor to the roux, which is usually just plain oil. From the beginning you start developing layers of depth. Paul Prudhomme did this in his first cookbook and Donald Link as well. Definitely an added step and can skip if want to save time. But it makes a difference IMO.
