How to Make Anthony Bourdain's Mortadella Sandwich

Anthony Bourdain was a legend, and this sandwich of his is no different. Here's an ode to one of the greatest to ever life: the Fried Mortadella Sandwich
Servings: 1
Ingredients:
1/4 lb. sliced mortadella (sliced very thin)
3 slices white American cheese (or provolone)
1 brioche bun
1 tbsp. butter
Pepper to taste
Using a large nonstick frying pan on medium heat, you want to make 3 piles of mortadella in your pan. Each pile should have 3 slices of meat - in total, 9 slices of mortadella divided into 3 piles.
The mortadella is going to cook in it’s own fat. Cook each pile until golden brown on one side (1-2 mins), then flip each pile with a spatula and cook the same amount on the opposite side. Add a sprinkle of pepper to each pile of meat to taste (optional).
While your meat is cooking on the flip side, place a single slice of cheese on each pile, then cover your pan with a lid while the cheese melts.
Once your cheese is melted, spatula each pile onto a plate, then stack the piles on top of each other.
Add butter to pan. Once melted, toast your bun (top and bottom) face down in the pan until golden brown and lightly toasted.
Slide your stacked mortadella and cheese onto your bun. Cut in half and enjoy.
Notes:
We love a classic slice of American cheese on this sandwich because, let’s face it, nothing melts better. However, sliced provolone would work great as well.
In our opinion, the key to really enjoying mortadella to the fullest is getting it sliced very thin. When we go to the deli, we tell them, “sliced paper thin.” It’s so salty and rich, too thick of a slice can be overkill.
Also, we strongly suggest not adding salt to this sandwich. Between the mortadella, cheese, and buttered bun, you will be salty enough!

I did it with mozzarella, and added italian marinated bell peppers and pickles, it was delicious

4:54 possibly because he realized my maternal grandma (who incidentally was from Bologna) made better "panini con la mortadella": her first version is simply mortadella and few pickled little onions (you cannot beat that and no cooking involved), the second version is a salsa obtained by melting some anchovies in warm butter, spread on the bread and then add the mortadella.... and BUON APPETITO (not bon appetit, we ain't no frenchies!!!)

I love Bourdain, and this is a truly wonderful sandwich. But in his cookbook, Appetites, he expresses distaste for Brioche. I like it fine, and you nailed everything else. But if anyone wants to be overly exacting to his tastes, he recommended sourdough or a kaiser roll.

Sam's Club used to sell this loaf of cheese that was a white American/Swiss cheese. This is nothing in this world that melts better than that stuff.

Eh- I tried this. Mortadella was nearly $20 a pound at the deli. In the end, it tastes just like a fried bologna sandwich. Save your money.

Next time slap a decent layer of dijonaise on each side of the bun for a nice kick to the flavors. Beautifully done chef!

Mortadella..... It's bologna with pistachios. I think it's hilarious how they've made bologna famous and upscale food. Good sandwich, though. I like mine with caramelized onions and grilled mushrooms.

Provolone melts fine - without a cover. I just made this sandwich an hour ago (with a splash of of olio d'oliva). I had Wegmens mortadella. I need to find the pistachio (pee sta kee oh 🤌)

Like the vibes fellas. Saw on my iPhone news feed about this sandwich and Bourdain part of it and went straight to KZfaq for a proper video on how to make it and y’all didn’t disappoint. But one question 🙋‍♂️ The article said mustard and mayo on the sandwich I don’t see that on the ingredients list. Was that on purpose for a better sandwich in your opinion? Just curious cause I’m definitely making this sandwich when I get back home from working on the road
