Apple Fritters. OMG Apple Fritters. Just the thought of them elicits a mouth-watering frenzy. Is it crisp and yeasty? Is it craggy? Is it appley and cinnamony? Sweet but not TOO sweet? In this time of social distancing where does one get such perfection? We hope you can get one curbside from your favorite local donut shop, but if not take this homemade apple fritter recipe for a spin. Yes, apple fritters are fried (why do you think they taste so good?), but if you're a little timid around boiling hot oil, we'll show you how to bake them too for more of a danish texture.

FOR THE FRITTER,
This batch size MAKES 6 LARGE fritters- If you want to bake instead of fry , I recommend proofing for 40 minutes after shaping and baking with egg wash at 425 for 15 -18 minutes depending on the desired color. Glaze as you would donut. It's very tasty almost like coffee cake or a danish.
275g or 1 3/4C. AP FLOUR
5g or 1 TSP YEAST
70g or 1/2C. MILK
1 EGG
35g or 2 TBPS SUGAR
5g or 1/2 TSP SALT
60g or 5 TBPS BUTTER
1 QT or 4 cups neutral high smoke point cooking oil.
1. In a medium stainless mixing bowl combine the dry ingredients, mix to combine, and then cut in butter, tearing into small pcs to help distribute.
2. Add in milk and egg an using a spoon, stir to combine
3. Once a cohesive mass has been formed, turn out onto work surface and knead until well combined, shiny and no butter chunks are visible. Don't be afraid to add a little more flour if your dough seems wetter than you'd like.
4. Put in covered container in warm place for 2 hours.
5. Proceed with instructions from video to finish
FOR THE APPLE FILLING
250g or 2-3 APPLES (Granny Smith or Honeycrisp)
2-3 TBPS BUTTER
2 TSP CINNAMON
2 TBSP SUGAR
2 TSP CIDER VIN
1 tsp LEMON JUICE / ABOUT 1/2 LEMON

I had my first apple fritter experience as a child. There were always donuts in the adult classrooms at the church and my grandmother, being a grandmother, would share a pre-church treat with me now and again. I had avoided the fritter thinking, it has apples and NO chocolate glaze it can't be better than the others. My grandmother noticed my reluctant behavior and convinced me to try just one bite. She broke off a craggy edge crusted with glaze and handed it to me. In that moment, even standing in a church as I had many times before, I had never come so close to actual heaven as I did savoring that bite. Nothing has held a candle to the apple fritter since. Sadly, I am no longer able to consume any dairy at all. And so, it has been a very long time since I have enjoyed a little piece of heaven. Yours is, by far, the best how-to I have found on the subject. I think I am going to attempt this with vegan butter substitute and oat milk. Fingers crossed!

I made these and they were fabulous! The frittering technique is spot on. I baked mine. I just don't like to fry things in my house. I double glazed with generous amount of icing. So so good. Will make again for guests as a special desert.

We had a great donut shop near our home growing up and they made awesome apple fritters (of course my brothers called them Big Nasties) and I always thought they were made with yeasted dough. But most of the recipes I've seen on KZfaq are for a baking powder batter. This looks exactly like what I've been seeking!! Thanks for posting!

My father owned 3 donut shops and I myself was a baker for several donut shops. The chopping the apples in is the best way you are right. Most donut shops use pie filling for the apples you can use cherry pie filling or pretty much any other pie filling for various flavors. The Cherry ones are delicious.

4:00 AM: Time to make the doughnuts! Lol The cherry one’s really sound good, we have an Amish store about a half hour away and they sell homemade sour cherry pie filling that is like 90 percent cherries and is unbelievably good. I think I’ll go grab a couple containers of cherry pie filling and see how that works out. Thanks for the tip!

Just made these. I’m freakin blown away. They’re INCREDIBLE. I’ve tried many times to make a good apple pie, but the dough was always the problem. I was worried this time, having never made fritters. But this dough is amazing, and the fritters as a whole turned out better than I’d imagined. I used some apples from an orchard nearby and added some ground cloves and nutmeg to them, too.👌👌👌 Highly recommend!! Thanks, Bri!

My all time favorite donut. Like the almost dicing method of the dough, I have to imagine it also helps to create those crispy edges that are so loved in a fritter. Great job!!

I remember seeing that old video of a commercial baker making the dough and shaping it like a cinnamon roll, then chopping it on angles both ways. Your way is the bast way to make apple fritters. And it is the way I'd make them when I find the time to do so. There's one donut shop in Coldwater, Michigan named the Dutch Uncle that has the best apple fritter donuts I've ever had in all my travels. I'll bring a dozen home anytime I pass thru there. Sweet, hard, craggy, cinnamon and apple flavor...just a perfect donut to be found. THUMBS UP!!!

Brian, I made these today!! SUCH an easy dough - way better than store-bought apple bits! The only thing I changed was to add a little orange juice and orange zest in the glaze - oh baby! They are SO good!! Thanks for making me feel like I could and then showing me how I CAN!! =]

Made these today, they are wonderful. Probably used too much apple but it all worked out, also needed about twice the amount of glaze. Will definitely make again in smaller sizes. Great recipe, thanks---

I know Brian recommended honeycrisp or Granny Smith but I happen to have about 30 pounds of Fuji apples right now that need to be used up. This recipe is it! I’ve never made apple fritters before - I’ve never even eaten one before but everyone loved these! I made 12 baby fritters instead of 6 large ones and def let them get really brown and crispy. 😊

We deep fry every year. Our Christmas wafflettes are a family favorite. They are made with shaped irons dipped into a pancake like batter and deep fried until crispy. At Christmas we use the tree, snowflake, and butterfly (angel) irons. While they are hot from the oil they are dusted with powdered sugar. I've gotta do apple fritters this year. I've got three trees with an abundance of apples to do something with and I do love fritters. We will be making apple butter, sauce, pies, and most likely fry some apple donuts too.

I made these this morning ... WOW! They are delicious. @7:50 you said "make sure the oil is at 360 degrees." I found out the hard way that this is key. The oil was too hot for my first fritter, probably about 400 degrees or so. I took it out after about 2 min. 30 sec. and it was too brown, almost burnt, on the outside but the inside was not fully cooked. The rest of the fritters I put in at 360-370. The temp dropped as they cooked but never below about 320. 2 min per side as you suggest was perfect. Thanks for this amazing recipe.

BEST fritter EVER! Finally made a dairy free version and it worked amazingly! I used oat milk and vegan butter. Fried in canola oil. Adding this to my personal recipe book. Thank you again!!!

@@sd.2528 Industrial vegetable oils that have been subjected to high heat and high pressure (e.g. most cooking vegetable oils like canola, peanut, soybean, etc...) are usually rancid by the time they hit shelves and introduce a number of health problems when ingested. Most notably, cellular inflammation due to your body using damaged fatty acids to repair cellular tissue, and a very skewed omega 6 to omega 3 fatty acid ratio, which further oxidizes the body. @@sd.2528 I love using coconut oil! I can find a huge container of it at Costco. And I use avocado oil in my cakes. Olive oil for everything else, but you have to watch which brands and where you buy it. I also get my extra virgin olive oil at Costco.

My fav fritters used to be Market Pantry at Target, until the quality took a dive. They were fried to a rich goldeny brown, with bits of al dente apple mixed into the cinnamony yeast dough and a milky white crust of glaze. Each piece was a one huge fat and sugar bomb but soooo good and worth it. Oh, how I miss them. 😢

The best fritter I’ve ever had was a blackberry fritter made daily at this little coffee stand inside the maritime center in Port Huron, MI. I’m going to use this as a base recipe and swap out the apples for blackberries 💜

I'm totally going to try these. Fritters are by far my favorite pastry. I'll have to try to make a low-sodium version, tho. I've got white bread-machine bread working pretty well now, ready to start oven baking from bread-machine dough. Any tips on reducing sodium in baking? Also... what's your opinion on rice bran oil for deep frying?

Hey Bri! Just made these today and they were delicious!! But blew apart during frying. I used 250g of diced apple and it seemed like maybe there was just too much apple for the dough to hold onto? Maybe I sauteed my apples too long and that drew out too much of their moisture? (I used granny smiths) As soon as I chopped the roll I could feel that it was wet and might not stick bsck together well (I did add the extras flour you recommend) I'll try again with a little less apple next time!

Hey Brian, I just made these today! Another success! I definitely need to commit further to chopping it up and recombining it. Use a bit more flour to keep it from falling apart. All that said. First time out, they were really good! Question…. Can I put the dough in the fridge over night along with the prepared apples so I can have fritters before lunch?

I have a much much simpler recipe but boy did those look good! And not a donut shop around here makes them anywhere close any more! They actually fill donuts with pie filling and call them fritters!

I like deglazing my apples with Boiled Cider, it really amps up the apple flavor.

Did the oil temp work out well? I always felt it could have been 5-10 degrees cooler than he said in the video.

My suuuuper dark grandpa coffee is Hills Bros. Dark Satin. It's fantastic, reasonably priced, and is available almost anywhere. Great video...I can't wait to give this a try on a cold November morning.

Love this recipe this is how I discovered your channel! My fritters kept falling apart until I actually finished the video and saw that you use extra flour as a binder. Go figure. Thank you!

I used to work at a bakery where we made fritters. We used left over dough from raised doughnut products chopped up then added the apple mixture ... this was 3o some years ago ... can't remember if we proofed them before or after ... but being the bottom had indentations on the bottom from a rack I would guess after. Smooshing the dough and apples together with your hands and forming them ... free hand gives the fritter the rough surface a different texture than of raised doughnuts. We glazed them after they had cooled enough to touch to dip them in the glaze.

Yeah I should have glazed after they cooled. Rookie mistake by me. I think I’m going to reshoot this video in 2021 at some point with some small tweaks and that is definetly one of them.
