Jerk sauce ingredients: 4 tbsp veg oil 5 tbsp White vinegar 1 large tbsp Pimento seed (or allspice) 1 tbsp brown sugar 11 garlic cloves ?? Fresh ginger 3 medium White onions 12 stalks of Green onions 1 tsp Browning 1 tsp Ground nutmeg 1 tsp Dried chili ?? Mixed herb (or cilantro) 1 Lime ?? Fresh thyme scotch bonnet peppers 1 tsp soy sauce ?? Salt

Thank you so much for this video, I’ve just started dating a guy who’s parents are from the Caribbean and he grew up on classic Jamaican dishes like jerk chicken. I wanted to learn how to make authentic Jamaican jerk marinade for him. It was so much fun to learn, I’m white British and I didn’t even know what a scotch bonnet was before this video 😂🙈 I followed your video as best as I could and he absolutely loved it, thank you so much for teaching me ❤️

I put a light coat of that on some ribs then put a sweet rub over it, smoked it with peach logs on the offset smoker, braised it with honey, butter and brown sugar in foil, then glazed it. #1 ribs of my life!

@@Coolbreeze_atl the green seasoning was culantro, garlic and lots of habanero. the sweet rub was called THE BBQ rub by killer hogs. I basically followed the super famous American way to bbq ribs which is smoke the ribs for 2-3 hours then wrap the ribs in foil that contain butter, honey, and brown sugar for about 1 hour...then unwrap put it back on the smoker for a quick glaze.

These mixed herbs, what herbs are in the mix? Is the seasoning mix very hot? it would be unfavourable if it only tastes spicy and the other spices cannot be tasted. You seem to like ginger and soy sauce as much as I do ;-). I put ginger in everywhere when I'm cooking, even if it doesn't appear in a recipe, except for desserts. I use soy sauce a little less than ginger but still very often. As far as I can remember, ginger and soy sauce are not used that often in Caribbean kitchens. Originally Asian foods are not as commonly used in Caribbean kitchens as there are more South American, South European, and African influences.

I just saw your recipe for homemade jerk seasoning it was perfect .......my question is how long does it last and should I store it in a glass or plastic container???

Plastic is porous and will make the marinade swell up, but glass wont allow that to happen and will preserve it for wks and months.
