Recipe
For the dough
* 850 gr flour
* 400 ml of water
* 1 tsp salt
For stuffing
* 500 gr of ground beef
* 250 ml of water
* 1 large onion
* 1 piece of cilantro
* 1 tsp caraway (cumin)
* Salt, pepper to taste
Preparing the ingredients
- For the dough mix flour, 1 tsp salt and 400 ml water, mix thoroughly, knead for about 10 minutes, the dough should get very firm and it may seem that more water is needed
- For the filling, chop onion and cilantro finely, mix with minced meat, add caraway, salt and pepper to taste, add water, mix thoroughly.
Preparation
- Roll out the dough into a 5-7 mm thick layer, then fold it into a couple of layers, roll it out again, fold it again and finally roll it out into a 3-4 mm thick layer (this process will take a lot of effort and about 30-40 minutes). It is important that the dough is even.
- Shape the resulting dough into flatbreads of 15-17 cm in diameter
- Put a teaspoon of stuffing into each flatbread and carefully seal, aiming for a large number of folds, the tail is firmly sealed and the top can be neatly cut off (for beauty).
- In a large pot of water (4-6 liters) boil water, add 1 stl of salt, make a funnel (carefully stir) and in the funnel throw khinkali (about 18 pieces) so that they do not stick to each other and to the bottom of the pot, cover with a lid.
- Cook for 8-12 minutes and carefully remove with a skimmer.
