Welcome back to Collins Country! In this video we share our homemade banana butter recipe! THIS BANANA BUTTER IS SO GOOD! :) This video includes step by step instructions that are easily understood by the beginner canner. It is a very simple and to the point video:) It shows how to make the banana butter and how to can it for long term preservation. Have fun making this recipe that everyone will love! RECIPE:
-10 bananas (3 cups).
-3 Cups sugar (half white, half brown sugar).
-1/4 Cup lemon juice.
-1 tablespoon vanilla
-1/2 teaspoon salt.
-1 teaspoon Cinnamon.
-Optional - 1/4 tsp. Allspice and/or nutmeg
 -Chopped pecans or walnuts
 box of fruit pectin (to make it thick like jelly I do not use this).
DIRECTIONS:
-Mash all bananas, pour into a pan.
-Add all other ingredients EXCEPT vanilla and nuts to the pan.
-Bring to a boil and boil 5-10 minutes until thick and it looks like caramel.
-Remove from heat, add vanilla and nuts if you want nuts in it. If adding nuts, chops them up and bake in oven for a few minutes to bring out flavor.
-Pour into sterile jars, leave 1/2 inch headspace, add lids/bands.
-Waterbath Pints and half pints for 10 minutes, quarts = 15 minutes.
