TIPS FOR GRILLING PERFECT CHICKEN
To use a charcoal grill for chicken, follow these steps:
-Prepare and clean the grill.
-Use natural lump charcoal or charcoal briquettes.
-Build a charcoal fire and create a two-zone setup.
-Preheat the grill with the lid closed.
-Season and prepare the chicken.
-Place the chicken on the indirect heat zone of the grill.
-Monitor the internal temperature with a meat thermometer.
-Flip and rotate the chicken for even cooking.
-Consider basting with sauce or glaze during the last few minutes.
-Finish the chicken over direct heat for a charred skin.
-Let the chicken rest before serving.
