1 kg oxtail
1 tbsp black peppers
1 tsp salt
1 tbsp garlic granules
Leave to marinate for about an hour or more if you have time.
Sear meat in a hot skillet on all sides then remove
Diced
2 onions
2 carrots
4 sticks of celery
1 Head garlic
Place all in the hot skillet u remove the meat from
Let this gets softened and a little colour then add 1 can of plum tomatoes
1 cup of red wine
4 bay leaves
1 bunch of basil
10 sprigs of thyme
1 tbsp dried oregano
2 cups of beef stock
2 Parmesan cheese rinds
Mix and then add back ur oxtail
Cover and let cook for 2 and half hours to 3 or until meat is tender and falling off the bone
On a low heat. Check on it to often to make sure it has enough liquid in side if needs more add boiling water a cup at a time.
Cook ur pasta according to the package
After meat is cooked and ready remove the herb stems and bay leaves
Pull the meat from the bone
Add some of the gravy sauce to a skillet that’s already preheated
And
mix with the cooked pasta , pulled oxtail meat and 1/2 cup of pasta water more gravy sauce
Finally add some grated Parmesan cheese and cracked black pepper then check for salt . mix and combine and ur ready to feast.
Now enjoy ur hours and hours of hard
