BIBINGKA (Filipino Coconut Rice Cake) it is all time favorite of every Filipino during dawn masses on Christmas season ..it traditional made from galapong (milled glutinous rice) and using clay pot in between of flaming charcoal to cook even the batter mixture...On my recipe I share my easy and alternative way to achieve smoky flavor of deliciousness of this classic delicacy of Filipino the BIBINGKA....hope you like the video enjoy...
Ingredients:
1/2 kilo of Rice flour
1 c all purpose flour
2 T Baking powder
1 1/2 c white sugar
4 medium eggs
1 t vanilla
1 t food color (yellow)
1/2 t salt
Toppings:
salted eggs
cheddar cheese
shredded young coconut
margarine or butter
white sugar (for blowtorch)
