Many recipes for beautifully squeezed decoration cakes are made with butter cream, but my shop uses whipped cream. Whipped cream is light and delicious, isn't it?

■How to make a birthday cake■
Genoise ingredients (12 cm round cake pan)
・ 2 eggs ・ Granulated sugar 60g ・ Syrup 1 teaspoon
・ Cake flour 60g ・ Cornstarch 10g
・ Milk 20ml ・ Butter 15g
■How to make Genoise■
Preparation: Place an oven sheet on the cake pan. Sift the flour together. Preheat the oven to 160 degrees. Put milk and butter in a heat-resistant cup.
1: Put eggs, granulated sugar and starch syrup in a bowl and mix well. Prepare boiling water, put it in the bottom of the bowl and boil it in hot water, and warm the egg liquid to 40 degrees.
2: Here, heat the milk and butter in the microwave. (600W 30-40 seconds)
3: Whisk at high speed with a hand mixer until the dough becomes white and cloudy. (Approximately 4 minutes) Slow down for the last 30 seconds to condition the foam.
4: Add the flour in two portions and mix by scooping the dough from the bottom with a rubber spatula.
5: Take a part of the dough in another cup, add warm milk and butter and mix well.
6: Return 5 to the original bowl, mix quickly, and pour into a cake pan.
7: Bake in a 160 degree oven for 25 to 30 minutes, and remove the air after baking. When the heat cools, store it in a plastic bag.
If you use the genoise the next day, the dough will become familiar and delicious, and it will be easier to slice. (If you use it the next day or later, you can store it frozen)
■Ingredients for whipped cream■
・ Whip cream (not dairy product) 100 ml ・ Granulated sugar 15 g ・ Cream cheese 10 g
■How to make whipped cream■
Preparation: Bring the cream cheese to room temperature and mix with half the amount of granulated sugar.
1:Add the other half of the granulated sugar to the well-chilled whipped cream and whisk with a hand mixer.
2: After 1 minute, add cream cheese and whisk until it has an appropriate hardness. Cake base: 8 minutes stand Cake main coating: 6-7 minutes stand.
❤︎Please change the amount of cream to make depending on the size of the cake, the number of genoise slices, and the design of the decoration ♪ You can also make double the amount.

❤︎The coloring agent can be liquid or gel. When using, please mix the cream while adjusting the color and hardness.
