Carnitas is a food that brings my family together. There are several ways I have seen carnitas in my family do them. This one is how my grandfather did them, very simple but they always come out delcious.

Carnitas recipe:
3 - 4 lbs boneless pork shoulder
2 lbs of pig lard
salt
2 limes
In a bowl with your pork, squeeze in the juice of 2 limes. Season with salt to taste and mix well.
In a pot or discado "disco", add in the lard and let it melt.
Bring the temperature to about 350 degrees. Once your lard is to temperature, add in your pork.
Cook the carnitas until you have a nice golden brown color. Be sure to stir occasionally as needed.
Once you have a nice color, lower the temperature to as low as you can go. I like to bring the lard down to about 200 degrees. Now slow cook the carnitas until soft and tender.
Remove and chop up for some delicious tacos.
Top with your favorite condiments.

Im adopted from russia but im ive been living in the states since i was less then a year old . And i live in a city where there are a lot Hispanics on the eaat coast. Mexica/ el Salvadoran food is one of my fav food and beautiful people as well. Love from the east coast dude. Keep the recipes coming! 🤙

Good morning Isabel, another great way to make carnitas, is a little lard in a pan. Brown all sides of your pork. Add in coca cola and juice from an orange, let it braise till the pork is nice and tender. You can add things to it, like garlic, oregano and other aromatics. Either way it is yummy, I hope you enjoy it.

Amazing, This is the first version of the recipe where I don't see other ingredients like oregano, cumin, garlic, serrano peppers, onion and tomatoes. The mihochan style has condensed milk and coca cola. Amazing!

Came up on your channel researching grills and went down the KZfaq spiral while thinking of other things I want for an outdoor kitchen and BAM next thing you know I'm watching you make carnitas thinking YEAH, I need a carnitas station. LOL. I like your family's recipe. Its simple and allows the other ingredients to flavor the meat. I also couldn't stop thinking about the suede Converse you are wearing and thinking I hope you don't get oil on them. Thanks for sharing.

Kirby, that looks fantastic. I never thought of cabbage on a taco. I never knew about slow frying. Down here in Cajun country, it’s a common thing to slow cook meat in a gravy to tenderize it. I’m familiar with that salsa. Had it at the real local Mexican restaurant. I also love the tomatillo salsa on pork.

Thanks brotha, ya its considered Confit. Some restaurants in Mexico have several pots set to different temperatures, so as they cook them they send them down the line to finish. That salsa is great, I have been a fan of it lately. It definitely goes great on Pork and Beef.

Hi Ian, that is my next recipe. My Grandfather is from Guadalajara, this is how he made them. My n-laws on the other hand, make it Michoacan style. I didn't start having Michoacan style until I gotten older. I just bought a cazo, so that will come soon. Thank you and Happy Holidays!

Go by look and feel, once the pork gets a nice color, lower the temp. Then cook until tender.

I filter it and put it in bottle to use in the future. After a few cooks, the lard is very flavorful.

I wish I could have taken the time to learn my dad's recipe, he tried to teach me a lot of things but he passed last year and I just never bothered to learn, now I have to drive a hour to a Mexican store just to get some and their carnitas are nothing like dad's. Every time people had parties my dad was the one to make them for everyone friend's, family, and even other families asked him to make carnitas for their quinces, kids parties and stuff.

Ive redefined my Carnitas recipe over the years. My Grandfather cooked in only lard and seasoned with garlic salt and lemon. He was from Guadalajara. As someone who was looking at Culinary school as a future, I focused my learnings in some of my upbringings. The coca cola with beer version I think is a trend and which I compare that style of carnitas with how my uncles would make their carnitas. Ive learned over the years that restaurants in Mexico had different cazo= aka discos going at the same time at different temperatures. That led me to a new style and faster. Cook in lard to fry then add water to braise the pork. This will make it tender and break down the meat. Just as you would have that trend recipe my Uncles would make. Keeps a true pork flavor and a tender piece of meat to chop. I plan to make a video on it, but life has taken its course with my weekends. Hopefully a strong return and this time not being scared of its outcome.
