Agreed. That's how the best cooks/chefs are that I've witnessed. When I don't have green peppercorns on hand, I just use coarsely ground black pepper and it's still delicious. Love this channel.

You are right about a child can do these recipes. My Father taught me to cook at age 5. He noticed I loved watching him cook, bake and make stocks. So he learn me first safety. Then about every kind of proper cooking, cutting,whys and why not. I feel in love with texture, flavor and process. Everything fell into place in my life. Chef Juan Pierre is a lot like my Father. Cooking is a passion. And yes a child can do it! I loved my Father putting a over sized apron and tieing it on me to get to cook, cut, knead, and prepare. People baby their children today. But children can do more than you think if you really see a child. I had 5 children of my own. So I can say that. 3 wanted to cook, bake, chop and create.🙂🥰

Beautiful 🥰 I've always said that children should be doing everything they're capable of doing at any given age. And they should be treated like a valued member of the team from the very beginning. We need to reorient our view on children and understand that our goal needs to be to prepare them for a life as an adult. Children are just new employees their first week on the job. Be kind and patient and give them opportunities to learn and practice.

my first reaction to watching jean-pierre's videos, while enjoying his enthusiasm, was "his dishes are outdated compared to other youtube chefs". i now realize his recipes and techniques are by far the most accessible of the whole bunch. his meals are always simple, and he's always fun to watch. love him. more butter!

kid- umm, cooking looks hard, I don't want to. grandparent- look! Chef Jean-Pierre has one for kids. it'll be like Sesame Street, except in the kitchen instead of on the couch. we'll do it together 😀 grandparent was smart and always emphasized how easy the next step is, just like our Chef here for kids and adults alike. hours pass quickly and later everyone exclaims "wow! this is the best ever!! even the restaurants can't top this" 😋 epilogue- kids grow up with gourmet skills for life 👩‍🍳👩‍🍳 my grandmother did something like this for me growing up. I am forever grateful ❤

I love this guy! He is not afraid of a lil alcohol. I’ve been a huge proponent of thermometers to avoid overcooking meats for years and years. So many people are so scared of undercooking meats, ESPECIALLY PORK.

You are a treat to watch, listen, and learn from, because you are a natural - teacher/preacher with an elegance of perfection from an old-school 'Perfectionist' - chef extraordinaire with a flair.....!! I am seventy-seven years young, and every day is a new learning process for me. A cook from compulsion at age eight on a wood stove, and still loving my time in the kitchen. Over the years since, and with many meals under my belt, and the 'thought' that my cooking was great - I found you! Through your videos, you made me realize the errors of my ways. A 're-awakening' followed, and a new found understanding of what makes a good dish, an elegant meal, and am very proud to say my children/grandchildren love everything served from my kitchen now, and hopefully they will develop an interest in you as well. I love Chef Jean. His dishes are usually simplified, yet elegant. Steak au Poivre is one of my favorites. I make it and they think I’ve been cooking for hours! I can’t wait to try the chicken. I love freshly cracked pepper best.

As a pastor, we cook a lot of chicken (usually fried) for fellowship meals . . . I call chicken the Gospel Bird. As a Methodist, I don't know which came first, the Gospel or the Chicken . . . either way, folks soon found they go together very well . . . However, this recipe would add a lot to the meal, especially when you take the Green Peppercorns and preserve them in Cognac . . . Chef Jean-Pierre said that can of Green Peppercorn could feed the whole church . . . May have to try this soon . . . Thanks Chef for sharing again a great dish to enjoy . . .

This meal is SO fast, simple to prepare, and incredibly delicious! The key is to cook the chicken to 155 and let it rest, finish the sauce with butter, and serve with cracked pepper. It's amazing! I served this with sauteed Brussels Sprouts from the garden finished with lemon pepper, and quinoa with a squeeze of lemon. Thank you, chef, for these amazing recipes!

I made this Rockstar chicken for a dinner party last night and my friends raved about it! And if there had been any of that delectable sauce left over, we would have "rubbed it all over our bodies". DItto here as I smoked up the kitchen last week trying to make some 'Chicken Scallopini ' and had the temp to high in the skillet.....lesson learned ! Chef Jean-Pierre is 'just amazing' as he always calls his recipes !

For years I used the Knorr green pepper corn sauce mix, then they discontinued selling the packets to the general public & I felt just a bit intimidated to make the sauce from scratch. No longer Chef Jean-Pierre, thank you for showing us, how simple it is to make. It's one of my favorites. Now, I need to check out your other videos for Hunter's sauce, another favorite. Your enthusiasm is catching! Thank you again.

according to food safety you can kill the bad stuff in the chicken at lower temperatures if you cook it for a longer time which helps you preserve the juiciness of the white meat in the chicken. Personally I first heard about this from adam ragusea and have been able to enjoy white meat much more since then (shoutouts to him). This is something i like about you and your crew. I used to hate chicken breast, until I followed JP's recipes. I have never tasted chicken breast that good. Now, I use chicken breast in a chicken dish as much as possible.

Chef, you're right there with my all time favorite Frenchmen, including Louis Pasteur and Albert Camus. Only, unlike their work, yours is one of pure joy. Subscribed for as long as you'll be uploading awesome content. I tried that chicken au poivre recipe today and it was absolument parfait! By the way, the technique in which you use a colander for whisking flour in order to thicken the stew changed my life!
