I’m just south of Indy. We have a good Indian restaurant in town, but the style is entirely different to the way curry is cooked in the UK. It’s good, but it’s not like home, if that makes sense?

I was born and grew up in Birmingham city, so as a “Brummie” we have a vast choice of Indian cuisine and we know a good Indian, Bengal or Pakistani dish, I’ve been watching and using this channel for a while now to cook my own due to the lockdown and to be fair , these recipes are up there with the best, cheers Latif, you’ve saved my sanity 👍

Cooked this last night, jalfrezi is my favourite dish and many tutorials or recipes i have tried haven’t really done it justice. However this is better than even some of the best restaurants and takeaways i have had and now i can cook it at home without ordering or going out for a meal, at a fraction of the price too. Honestly couldn’t be more grateful, thank you. 👍

Love this traditional old bir jalfrezi. It reminds me of what my father taught me and it was one of my favourite takeaway curries. Don’t like the new style takeaways do where the onions and peppers are huge pieces and no masala sauce which makes a big big difference in flavour. Might make some at home soon again as the family love this as a treat

BIG T We do along with the usual spices like cumin, coriander etc in certain dishes only. I know in restaurants and takeaways that the spice mix made by the chef more often than not does have curry powder too. It’s only a mix of spices so people do prefer certain brands and heat levels.

BIG T I know some people who buy already mixed spices which I guess would be made to a specific stores taste and people do sometimes prefer these and stick to them. In Pakistan there are masala stores(spice stores) that also to their own special mix which would be the “curry powder” in essence but like I say some people do prefer these than their own. Nothing wrong with it and I don’t think it’s a British thing as stores have always done these but to sell to the British I guess you would say “it’s curry powder”. It’s like tea, brits think they invented it but it’s actually Chinese to started have leaves seeped in hot water. It’s only relevant the point at which its commercialised and known from then but we forget its true roots.

The indian restaurant near me does a Chicken Naga Madrass Jalfrezi, I guess its a chef specialty for that restaurant but I Tell you its the best curry I have ever had in my life.
