Quick tip. To hone a serrated knife use your honing steel and slide the knife down with the steel vertically held on a bench top. Cloth or tea towel on the bench to keep everything firm and not slipping. Take your time and allow the knife’s grooves to fit along the length of the honing steel. 3-4 downwards strokes should bring the blade back into play.

I use my oscillating saw, with a new blade, to cut the ice. Easier and makes short work of cutting up the cubes. Then a heated frying pan to further shape a polish the cubes. Hold the cube with ice tongs when doing this.

I do the same steps at home. I don’t force the ice out of the cooler. It’ll release naturally after a few minutes or so. Just temper the ice by letting it sit, and you’ll get the clear ice.

Great video. After some practice I was able to get it right. Just requires patience waiting for the ice block to get to the right temperature so carving is much easier. Cheers!

Remember to filter the water, it clears it giving even more clear ice over the same time. Besides, bruh, you are willing to wait 30h for the ice but can't wait 10 minutes for filtered water? Come on.

I’m lucky to have pretty great water where I live but it definitely would do no harm, especially if the water where you are based improves in taste when filtered 👍

I have added some tips around timings and temperatures that aren’t in any of the other videos I found around the technique, so hopefully it adds value to some. If you’re already familiar, don’t feel any pressure to watch this one, that’s totally fine and there are plenty of other videos which may be useful 🙂 I know a lot of my viewers have a background in coffee so many have never made clear ice before. If you have and are comfortable with the technique, that’s awesome!

@@DANFELLOWScoffeecocktails I've made clear ice a bunch of times with the same esky, and watched a bunch of videos on the topic. Somehow this is the first time I've picked up that i should let the ice temper after getting it out of the esky, so thanks for making this one!

The topic has been covered before, yes, but my hope is that it provides some new information around timings and tempering which have yielded great results. I also use clear ice in a lot of recipes so it is valuable to link to a video showing how to make it for those who have never made it before. It's creepy that after a two year pandemic you actually don't know how to wash your hands. There are two indispensables in hand-washing besides hands. Water and SOAP, which doesn't even make and appearance on your kitchen counter! Your quick rinse does not qualify as a hand-washing, which is vulgar for a food-related video, not to mention unsanitary, since you handled ice that will melt in other people's drinks. ALWAYS use soap when washing your hands and scrub them with soapsuds for a minimum of 15 seconds. Those were the guidelines pre-pandemic, so less than that is really sub-standard. You get an F- for cleanliness and would be barred from my kitchen altogether. Also, you let your ice "temper" for 20 minutes, during which you handled what???? followed by no hand washing, I imagine. Yuck!

I 100% agree with you which is why I stress that washing your hands thoroughly is the most important thing, and suggest wearing gloves in a commercial setting. The soap is out of camera shot but I can assure you that it was used! I perhaps should have filmed the whole hand washing process which is always followed and obviously involves soap and the recommended procedure, but the video is about making clear ice rather than a hand washing tutorial, although this is critical to the process and is stressed in the video. I appreciate you flagging this, hope you have a great day!
