Hi Monique long time subriber here... I never comment much on youtube but in the past I used some of your recipes for family gatherings and of course it was delicous. A cousin of mine is getting married so I will be baking 2 types of cupcakes. I took a look at your video again and I was wondering....you dont have a recipe for Butterscotch cake or Butterscotch cupcakes? I wanted to ask if you could make a recipe for that please? I know if you did it make them it would be another amazing recipe to eat. 🙂

Good day! I hope everyone is well! I would like to know if anyone knows that if I use CAKE FLOUR do I still have to add the baking soda and baking powder? Or did she add those only because she was using regular all purpose flour?

@@msaerosoul1861 yes, you would still add it. It's a leavening agent. It's already included in Self Rising, not Cake flour.

I haven't made a coconut cake in so long. My mother died when I was 19. And the last time that I made one she was alive. But that was so long ago. It probably sounds silly but I was fighting back tears while watching this. Being with her in the kitchen baking pies and cakes, talking and laughing at the things she'd say are some of my favorite memories. And I like that it's a triple layer cake. It looks delicious.

I can relate. This was my dad's favorite cake. He would savor every bite like it was his last. It took a long time after he passed before my mom could make her well-loved coconut cake again. But she did return to making them on special occasions. What a blessing to have those memories and now you can build on those moments. God bless! 💞

My mom also passed away when I was 19 and every Easter she would have a coconut cake with my Easter basket and stuff.😔 I'm 38 now and I always remember my little cake.

I made this cake yesterday and when I tell y’all it’s SO🔥🔥🔥!! It’s GONE!! I added a pineapple purée between the layers that took it to a whole other level!! I personally don’t like coconut but I ate this coconut cake!! 🤣🤣I let my neighbors taste it, And they have ordered 2!! I’m fairly new to baking. I’ve been only baking about a year and a half and I’ve tried a few coconut cake recipes and this by far is the BEST one I’ve made!! It worked out so well I will NEVER use another 🎉coconut cake recipe!! THANK YOU FOR SHARING this AMAZING recipe!! I will be ordering your cookbook!!

So I've made this several times but WITHOUT the coconut flakes or the coconut extract. I also halved the recipe and made cupcakes. I baked them at 350 for 15 minutes and it yielded about 17 to 15 cupcakes depending on how much I filled the cups. Her vanilla cake recipe just called for too many ingredients for me due to my laziness. But yall this is sooo good. The cupcakes are so soft and fluffy. You don't even have to ice them because they are so good by themselves. She did such a great job on this recipe yall, it's definitely worth a try and still tastes amazing without the coconut.

I made this coconut cream cake, it was delicious! But when I put it in the fridge, I did notice that the cake was very dense, and it wasn’t light and fluffy. So I just left it covered on the counter, overnight the texture was light and fluffy. Obsessed!!

I don't like coconut flakes on a lot of things, but I owed my niece a solid and she asked for a coconut cake. I research online and felt pretty good about your recipe. The cake came out great! I did 2 layers and added coconut in between the layers. This cake is super moist to the touch. Even after it cooled I thought the layer would melt in my hand. It was a birthday and I didn't want a slice but my niece loved it. Thanks Diva!

This cake looks incredible. The frozen fresh coconut was perfect for the snowball look. My grandma loved coconut cake (RIP) 🫶🏾 Unfortunately I LOATHE anything coconut. TFS though, it brought back a great memory of me soaring the internet to make a coconut cake that was healthy for my grandma.

You can use coconut cream instead of heavy whipping cream ... it has the same fluffly and stiff peakness m put the can in the freezer the night before remove the creame and keeo the water in the can

Hi Monique Thank you for this amazing recipe. When I whip my heaving cream with the vanilla and coconut extract it doesn’t get stiff and I’m afraid I’ve overloaded it. Any suggestions on how to stiffen? I’m making it again for Thanksgiving.

This looks absolutely delicious! My Mum loves coconut so I’m making this for her for Mothers Day which is this Sunday in Australia. Just a couple of questions… I’m making this into a heart shaped vintage cake with the fancy piping. The heart tins are only 7” at the biggest side. I was planning on doing 4 layers in the smaller heart tins. Would I need to adjust cooking time for this? Also, is the frosting going to be thick enough to hold the shape of the piping? Easier than 7-minute frosting. I made a coconut cake for my mother every Easter for a few years up untl she died and kept the tradition going for the rest of the family. The sour cream is a good addition to the batter. One time I made it I accidentally doubled the oil but it came out so tender and light, I kept doing it that way.
