Great video. I've been doing the chorizo and it turned out great. How long have you kept the tenderloins in your work shop before smoking? And how long after smoking? Thanks

Thank you for your kind feedback🍻 I’m stoked you have had chorizo success 😊 you could cold smoke the tenderloin straight away for more flavour - I did mine two weeks in then left for another two weeks in the workshop. Good luck
