Homemade crème fraîche is the sophisticated French cousin of sour cream. Its texture is smoother and the flavor more subtle, not quite so sour, but still a bit sharp. It is unbelievably simple to make and requires only two ingredients, so it is no wonder it is a staple in most French kitchens and a must have for pastry chefs.
I like to finish sweet desserts with the cultured cream; a thin layer on my butterscotch pot de crème, a dollop on top of a berry pie or stirred into chocolate ganache. It can be used in place of sour cream or most places you might use heavy cream.

Over here in Sweden, we can't get hold of butter milk. I've tried several versions using other "souring/culturing" agents and have found one that is a near perfect replacement for butter milk. It's a mild plain yogurt that has the culture in it. So far, it works great! If you use a stronger plain yogurt such as a Greek, Turkish or other yogurt, you will end up with a wonderful thick and very rich Greek, Turkish, whatever other yogurt you have used. Win win either way.☺

I have about this several times but I have never left milk out of the refrigerator for any length of time. Why doesn't it make you sick? How does it differ from spoiled milk?

Thanks for the video Zoe! This is not a critique but a question. I have seen a few chefs make Creme Fraiche but some of them have said that it won't work with Ultra Pasteurized Cream. That we should only use Pasteurized Cream. Also, we should only use full fat Cultured Buttermilk. The problem is those items are hard to find in the markets today. Was your cream Pasteurized or Ultra Pasteurized? Was your Buttermilk full fat or low fat, because you didn't specify? I want to buy what works the first time. I don't have money to waste with these prices today. I'm still buying it in the container and it's expensive. Can you clarify?

Hi, Where in Europe are you located, maybe they call it something else? Anywhere that produces dairy would likely have something equivalent.

Hi. They are different types of bacteria. If you use a yogurt culture, you will end up making a full fat yogurt, which is a different flavor and texture. It will be delicious.

Such an interesting question, I have never tried it, but I am guessing it will since it likely still has the acid. If you try it, I would just do 1 cup of cream and the equivalent of 1 Tbsp buttermilk. Please let me know how it goes.

It does not! The cream I used was ultra-pasteurized. Either will work.
