How to Make Delicious Roasted Chicken Stock (Bone Broth)

Chicken Stock is the base for a number of goodies and a powerful tool in the kitchen. This is how to make it. Cook on, chums!
P.S. The term “Bone Broth” is sort of whack because broth isn't made with bones. Stock is. So all “Bone Broth” is actually just stock. Stock is made with bones, broth is made with meat. 🤘🏻Adam
BASIC ROASTED CHICKEN STOCK...
4-5 Chicken Carcasses + any bones
2 yellow onions
5-6 medium carrots (1 bunch)
1 medium Celery bunch
4-5 Bay leaves
10 black peppercorns
6 cloves garlic
1 bunch thyme
1 bunch parsley
Water to cover by 2 inches

I just found your channel Adam. I’m glad I did. Really enjoyed watching you make chicken stock. I’m getting ready to make my first batch. Your information is exactly what I needed and the way I want to make mine. The fact that you add don’t do this or that if you don’t have the time or desire is really helpful in answering questions that I’m sure everybody comes up with as they watch. So helpful! You might have created a stock making monster. Question: When you go to use this, say in a noodle soup, would you water it down or is the concentration about right.

So it's an older content, but maybe you see my question -> is it necessary to clean the stock from 'dirt' so carefully, or it is just the matter of look? Or does it effect the taste/ storage life? Ty in advance, L-L-Looove ur videos❤️

Hi Hilda. Clarifying stock is mostly just for looks. Unless you're making stock for consume or some other dish that requires a crystal clear stock, it isn't necessary. If you're referring to the skimming process, removing the gunk and foam from the stock as it simmers, yes. You should remove it and it DOES effect the flavor and look of the stock. Skim skim skim!

Bone broths (even organic) have very high levels of lead (Pb).

Most of this went to my client's house. The rest went in the freezer and 1 or 2 quarts in the fridge for semi immediate use! Just try to chill down the stock as quickly as possible in an ice bath than xfer to the coldest part of your freezer. Sounds like you'll need a commercial freezer... or two... or three.
