Fresh Matumbo (Tripe)
Onions
Garlic
Tomatoes
Bell Pepper
Cooking Oil
Salt
Paprika (add other spices of choice)

-Clean and boil the matumbo (tripe) till soft. Add salt while boiling.
-Chop onions, tomatoes, garlic, and bell pepper finely.
-Heat cooking oil in a pan and sauté onions until golden brown.
-Add garlic and cook until fragrant.
-Incorporate chopped tomatoes, and bell pepper. Cook until they soften.
-Season with paprika to taste.
-Add the tenderized matumbo (tripe) to the pan and mix well.
-Allow the flavors to meld together on low heat for a few minutes.
