at 9:15, when you our all the curds out of the pot, that is when I would have to pull some out to just eat them by themselves. Are there any recipes that use curds in that state before you make them into cheese?

when the cheese is aging if you don’t clean the mold does it affect the cheese or will it spoil the cheese ?

As it's a very low moisture cheese, it should not affect the cheese if you don't clean it regularly.
