This was delicious! I made a double batch, and froze one. When I thaw and bake the 2nd one I’m going to sprinkle the top with black olive slices.

I now know what I'm making the family tonight! I'll sprinkle on some sliced black olives and chopped green onion tops to the top of this as soon as it comes out of the oven, then let it 'rest' for about 5 - 10 minutes before smashing the dinner bell. Thank You, Love!

Hands down the most creative chicken enchilada recipe here on KZfaq. 💯 I still grimace when I hear flour tortillas are being used where corn traditionally is utilized, but perhaps I need to finally try it for myself, which I will, for the first time, soon. However, I will plan to roast the poblano Chile and bell pepper first. Maybe add some bacon grease to the beans, and some tomato paste to the onion, pepper, & poblano chili saute. Btw--love this chic, her southern draw, and relaxed attitude around food; reminds me of my Texas upbringing......

In my Mexican kitchen, we'd call that a wet burrito. For enchiladas, corn tortillas add so much more flavor, if prepped properly.

Flour tortillas are always my # 1 choice. I'd add some smoked paprika somewhere in there (my favorite secret ingredient).

True fact is you work when you got if there's no true Holly spice or some sauce you work when you have and do the best you can there's no right or wrong.. and yes I know some places don't have the certain sauce the enchilada sauce or the right tortilla I understand..

Foil ain't good for you. It's recommended to put parchment paper inside the foil so your food doesn't touch directly on the aluminum foil. Metal ain't good for you. I am allergic to metal. I can't wear earrings. I pawned off my earrings.
