Here's a delightful and healthy recipe for Eggplant Begun Bhorta, perfect for adding a burst of flavor to your meals:
Eggplant is a great source of fiber, vitamins, and minerals. The spices used, like turmeric and garlic, offer anti-inflammatory benefits and antioxidants. Mustard oil adds a unique flavor and contains healthy fats. This dish is a wholesome choice for a balanced diet.

Eggplant Begun Bhorta Recipe
Ingredients:
1 large eggplant, sliced thickly
¼ cup water
Pinch of turmeric
¼ tsp salt, plus a pinch for seasoning
1 tbsp mustard seeds
½ tsp kalonji (black cumin)
¾ cup red onion, thinly sliced
5-6 green chilies, halved
4-5 large garlic cloves, smashed and thinly sliced
4-5 dry red chilies, roasted
3 tbsp onion, thinly sliced
3 tbsp fresh coriander, chopped
1 tsp mustard oil
Instructions:
Prepare the Eggplant:
In a cast iron pan, combine the eggplant slices with ¼ cup of water, a pinch of turmeric, and ¼ tsp of salt.
Cover and cook for 5-6 minutes until tender, flipping halfway through. Once cooked, transfer to a plate.
Spice Infusion:
Clean the pan and warm 1 tbsp mustard seeds.
Add ½ tsp of kalonji and let it splatter for 10-20 seconds.
Add the sliced red onions with a pinch of salt, cooking until soft and colored.
Introduce the green chilies and garlic, cooking until lightly browned.
Combine and Cook:
Add the cooked eggplant to the pan. Break and mix them with a spatula over high heat until dry.
Final Touches:
On a separate part of the plate, crush roasted dry red chilies with ¼ tsp of salt.
Mix in 3 tbsp of thinly sliced onion until soft.
Combine this with the eggplant mixture. Mash well using the bottom of a glass, then mix by hand.
Garnish and Serve:
Stir in 3 tbsp chopped coriander and 1 tsp of mustard oil.
Mix well and serve alongside warm rice for a truly satisfying meal.

I was screaming at my phone that it tasted better with raw onion thinly sliced and green chili thinly sliced and mixed with salt, glad you added raw onion at last and green chili would have been a great combination.😅

Ha ha, we totally get that! The addition of raw onion really brings out a fantastic flavor, doesn't it? In this recipe, we actually added the green chili a bit differently, by sautéing it with kalonji in mustard oil. This method infuses the dish with a wonderful, aromatic flavor boost. Sorry to say but u have made a simple recipe complicated..... You have made Seddo Begun Makha and not Begun Bhorta. It would taste much better by cooking the whole brinjal on open flame.
