How to make Eggplant Rollatini - Quick & Easy Italian Appetizer Recipe under 10 minutes

Ever wonder how to make perfect appetizer for your guests, this recipe is for you! Today we are making famous Italian vegetarian appetizer - Eggplant rollatini - easy and delicious recipe from eggplant.
Ingredients:
- 1 medium size Italian eggplant
- ¼ cup of vegetable oil
- 1 egg
- ¼ cup of white flour
- ½ cup of tomato/marinara sauce
- 1 table spoon of grated cheese
- ½ tea spoon of dry Italian herbs
- Basil leaves for decoration
- 2 table spoons of each cheese: ricotta, mozzarella, and grated cheese (ex. parmesano reggianno)
Recipe:
Prepare eggplant stakes - cut the eggplant to 10-12 thin slices. Mix the flour with dry herbs in a bowl. Roll eggplant slices on both side in a flour mixture. Whisk 1 egg in a mixing bowl. Coat eggplant slices in the egg mixture on both sides. In a frying pan, add oil and heat to 350F. Carefully place eggplant slices to the pan (3 slices in 1 pan). Fry for 2-3 minutes each side. Then, receive the eggplant in a plate with kitchen paper towel.
Prepare the cheese filling: Mix the cheeses with some basil leaves. Mix it well and roll the cheese into even size balls and flatten it slightly to “sausage” shape.
Place fried eggplant on a flat surface, put the cheese filling on the eggplant and roll it tight. In a baking tray spread 1 table spoon of tomato sauce, and place eggplant rolls on the top. Place in the preheated oven (350F) for 3-5 minutes. Take it out and serve it with some tomato sauce and sprinkle some grated cheese over it and decorate with basil leaves.
