30/40 elderflowers
500 grams of sugar. White or brown.
1/2 a litre of water
1 lemon 🍋

Wow, that elderflower honey looks great! Thanks for pointing out that the bark feels like cork, and that the leaves are a bit toxic. Very interesting that the flavor is more subtle than the dandelion honey. I hope to be able to try both one day. Thanks for sharing another great recipe!

They are great to find, especially showing the kids as they ‘wobble’ when poked and are rather easy to identify. Now when the flowers end you already know what the elder looks like - finding the mushroom will be easy peasy en.m.wikipedia.org/wiki/Auricularia_auricula-judae
