What you know about that Haitian cuisine, Miss Gina? My neighbor is Haitian and she is one of the nicest most gracious people that I know. Girl, she really cooked plenty of her country's best dishes for Christmas! Her potato salad made with beets is soooo good. It is now my favorite potato salad. That Epis takes food to another level. I am a lover of Haitian cuisine now. It is so good!

Hi Gina! I love that you are representing for the Haitian Culture . Maybe next time let the chicken marinate in the epis and dry seasoning for at least an hour or days before actually cooking it. The point of scoring the chicken is so that the spices get deep down in there. Next you can add the chicken to cook in a covered pot and it will create its own water. You can gradually add a little water if necessary. Just a little tip!

I asked a Haitian family at church for their recipes and they sent me home with epis today. The flavor is incredible , beware scotch bonnet peppers in it . I love it. I used this recipe as a base to make as close as I can it’s smelling great.

It’s nice seeing another culture trying out Haitian food😙 just one tip...marinate the chicken with the epis and the seasoning overnight before adding it to water to it because it will lose taste quicker and we don’t use cilantro we use parsley 🤣

Ok Gina Young... who turned you onto “Manje Ayïsyen (Haïtian Food)”? I was dying when I saw you do it!! The style is correct. The only thing I’m going to tell you is is Haïtians normally don’t use cilantro in Haïtian epis; actually we use is Parsley. You can use cilantro but cilantro to most Haïtians is an acquired taste. Our neighbors next door, the Dominican Republic uses cilantro in their cooking. When are you actually going to make a full Haïtian Meal; the Jasmine Rice, SOS Pwa (Bean Sauce) and the Haitian Chicken in sauce? Go to Lamise O to give you pointers or better yet, invite her over to cook with you...

Yesterday was January 1, which is a meaniingful holiday to the Haitians! My gracious Haitian "in law" made a huge pot of soup Joumou, I am not sure of the spelling for the soup. But I had just finished eating dinnet, but I plan on having my soup for dinner tomorrow. Our family gatherings during holidays are filled with delicious foods from multi-cultures: Soul-food, Jamaican and Haitian. Damn, it just doesn't get any better! LOL

Jackie Land They are so good where I am from their called gandules. They are like beans and so amazing, especially in rice. If you have never tried it you definitely have to get yourself some arroz con gandules. It’s an amazing Puerto Rican recipe, it goes perfect with a nice pork butt roast

I do remember one recipe from Haiti I think you might like. It is a Fried Rice Cheese Balls. You need to make a sticky rice and cut cheddar cheese into 1inch cubes. make a Palm sized ball of rice. Then put a dent in it that will hold your Square cheese and form the rice around the cheese to make a ball make sure no cheese is showing and the rice sticks to the cheese. Then once you get them all rolled you add them to your hot oil and Friday outside of the rice ball. Then take them out drain them well and serve them with your Haitian Sauces. like a fish sauce or maybe even the sauce you made with this dish might be good. I never had it before I don't think. Give them a try I think your kids and you will love them.

Next time add the clean chicken with the seasoning in a hot pot without water, cover it. It will make it s own water and very tasty. Try it, u ll tell me. No offense.

I have already implemented the lime on my chicken 🍗 although I have always done the vinegar and sea salt thanks to my own Mom who has always taught us how to do that on raw meats and veggies .
