Hello! In this video I will show you how to make a halal version of Tori-Paitan Ramen (Chicken Soup Ramen) 鶏白湯ラーメン using boneless chicken and vegetable potage for broth. No pork or cooking sake (alcohol) is used in my recipe this time.
Tori-Paitan Ramen comes with a creamy soup base which is rich and thick yet not too heavy on taste. In my recipe I used cabbage which adds natural sweetness to the soup. The toppings are simple, yet a good mix of taste and texture to match the soup & noodles. As usual I do not use any MSG in my recipe.

this is one of the ramens I've made my own halal recipe for and surprisingly it's quite different from this video so once again thanks for going through the effort of making a halal version and I'll try out yours to compare. I still have my broth in the fridge since last week's batch

I'm trying this ramen definitely this weekend. It's by far the simplest one and ingredients I can easily find over here in France. Somehow I don't feel comfortable with the other method of using chicken feet! It's also good for other communities who don't eat pork or beef although I'm a non-practicing catholic myself. Thanks a lot chef!

ive' only had Tori Paitan from Seirock Ya chainstore in Malaysia and i have to admit; it is the most delicious noodle soup i have ever had. i rank it as my top most favourite on top of Beef Pho, Ipoh Mi Hailam (soy noodle soup), Ipoh Mi Kicap and Braised pulled La Mian noodle soup and Tomyam glass noodles. Laksa is a whole different category though. Although Tori Paitan is not spicy(i love a spicy nooodle soup), that broth.... really is something else. it can be both rich and brothy at the same time less salty. which is so difficult to do/find.

I liked this recipe because it doesn't contain pork, just chicken in the ingredients. Others chicken ramen recipes add pork, and that's a problem for people who are looking for just a chicken one.

Hi, i made this recipe today, but my ramen soup became so thick, maybe because i boiled it too long and the water evaporates. Should i add more water to make it more liquid? oh and my chasu end up not as smooth as yours, maybe my knife is dull hahah. Great recipe btw, thanks!!

would you tell me what kind of blender do u use? I tried using regular blender but there will still be a lot of gritty tiny bits of chicken meat if i dont strain it, p.s. i blended for one whole minute without my blender overheating

hi thank you for watching :) Common soy sauce may contain alcohol. Halal or pure soy sauce does not contain alcohol, but it is slightly more expensive.

When making the chashu, can I change the olive oil with vegetable oil or other edible oil? Kindly to give me some advice. Btw thank you for the recipe. The soup must be really delicious. I’ve tried to make it with your method when my kid was very small and dislike to eat meat, but at that time I didn’t use food processor, I used strainer mesh 😅

Question : do u need to strain the broth after you blend it? I find my blender at home incapable to totally blend everything and when you drink the soup you can still taste the meat fibres... So i tried straining it with cloth but the soup becomes translucent... Still white but not milky white

hi thanks for trying my recipe! if the broth separate it may be due to not enough blending done. but it shouldn't be a problem when you reboil the soup to make ramen. if you try to make again next time i suggest you blend a few times until the soup is very smooth and well mixed before placing in ice bath. hope this helps! please let me know how it goes :)

hi kerry, you don't have to buy an expensive machine to try making ramen. of course you can get a true ramen maker made in Japan if you are really keen to use a professional machine to make handmade ramen noodles. for starters a regular pasta machine works too, you can get something like this: amzn.to/2wLm1wQ

There's alot of halal ramen shops even in Tokyo Japan. They tasted delicious and pretty similar to the original non halal version. You definitely can open one in Saudi.

So your noodles hydration is at 36%., but you're also using a pasta rolling machine which wasn't designed for rolling ramen dough effectively. I'm using a manual Okazawa noodle making machine which has big rollers and currently making Ramen noodles with 28% hydration, but mixing the water with hand or chopsticks is not as effective, I recommend mixing the water and flour using a food processor, it's much more effective and distributes the water evenly through the flour and copies/mimics the motion of the large Yamato Noodle making machines. I simply used medium sized zip locked bags to get the hydrated flour into rectangular shapes before pressing them, this will make it easier to feed into the machine which will help do the lamination later.

Amazing.. The blender part was a clever move to avoid boiled the chicken soup for hours.. I've seen some recipes that take 4-5 hour long just to make creamy chicken soup..also they have made from bones.. Thanks

Hi. Great video man. I notice that after blending, you didnt strain the soup. I tried the recipe, but after blending, there is still a lot of bone particles that i still have to strain. Am i supposed to strain or i need to blend longer ? Thanks in advance man

Blending the ingredients with water seems a little like cheating, even though it reduces cooking time. The broth should be an emulsification of water fat and collagen through rapid boiling.

It honestly tastes the same, just reduce the water with more cooking time if that's an issue

He's adapting the classic method that would use bones which get ground up in the blender. I think I'd actually prefer this boneless method. Every time I've had the usual bone tori paitan (at least in the US) it just tastes muddy and bland, like bad gravy, and pulls the whole bowl down. The emulsification of water, fat, and collagen thru boiling is the tonkotsu method...check out his tonkotsu and miso ramen videos.

Hmmm i'm just figured out koukuchi and usukuchi soy sauce is still contain alcohol, so why u can say this recipe halal?

the alcohol content in soy sauce is so tiny that you probably consume more from eating fruits lol
