I'm showing you how to make a healthy version of taquitos from start to finish. First we go grocery shopping, and then we head back to the kitchen to make the recipe.
RECIPE:
2 pounds pasture raised pork shoulder, boneless
1 ¼ cup no added sugar BBQ sauce
12 tortillas
20 ounces tomatillos
½ large avocado
To cook the pork shoulder, cut it into 4 equal pieces roughly the size of your fist. Season the pork pieces all over with a pinch of salt and pepper. Preheat an electric or stove-top pressure cooker to high along with 2 tablespoons of avocado oil. Sear the pork on all sides until deep golden brown for about 10 minutes. This step is optional, but it does add caramelized yummy flavor to the pork.
Add 1 cup of BBQ sauce to the pot along with ¾ cup of water. The liquid should cover about ¾ of the pork. Seal the pressure cooker and pressure cook on high for 45 minutes. When ready, turn the pot off and let it sit for 10 minutes, then carefully release the pressure.
If you don’t have a pressure cooker, I would highly recommend getting one. Otherwise you can cook the pork in a slow cooker on high for 6-7 hours following the same steps to sear the pork in a cast iron pan. Or you can cook it in a Dutch oven for 3 hours with the lid closed over a very gentle simmer.
Allow the pork to rest for 10 minutes once it comes out of the pot. Then use two forks to finely shred it.Add a bit of cooking liquid to the pork to keep it moist.
While the pork is cooking, make the tomatillo sauce by preheating the broiler to medium. Peel the tomatillos, season with a shot of avocado oil, a pinch of salt, couple cracks of pepper, and broil until very soft and blistered for about 8-10 minutes.Place the tomatillos in a blender along with the avocado, a pinch of salt, and a couple cracks of pepper. Blend until smooth and creamy and check for seasoning. A ½ teaspoon of honey or maple syrup would balance the acidity if you have it! Set aside.
Warm the tortillas and wrap in wet paper towels and place in microwave for 15 seconds. Add 2-3 tablespoons of the pork filing to each tortilla, wrap tight, and place 1-2 toothpicks through to keep them closed. Preheat air fryer to 370°F, spray the basket with avocado oil, and spray the taquitos with oil on all sides. Air fry for 6-8 minutes, flipping halfway if needed, remove, and fry the rest. Keep taquitos warm in the oven.
If baking in the oven, place taquitos on a wire rack set inside a sheet tray, spray well, and bake at 425°F for 15-20 minutes or until golden brown. Of course you could deep fry them in avocado oil too, or bake at 425F in the oven for 15-20 minutes. If baking in oven, put taquitos on a wire rack set in a sheet tray. Serve the taquitos with the tomatillo sauce and extra BBQ sauce. Enjoy!
