I love America's Test Kitchen. I love everybody on the show. I also love all the recipes, and how they are prepared. I also love hearing Julia say ho ho ho when she is happy about food that looks good. She makes it so exciting to get to taste the new recipe, no matter what it is. I am so glad that I can watch America's Test Kitchen on my television, and on my telephone. I love you guys! Keep up the good work!!

Don’t drain the tomatoes with the salt, leave the juice of all the vegetables mix with the olive oil and it will create a nice emulsion of flavour that you can dip your bread afterwards (papara) best part of the salad.

Always love this combination of vegetables in just about any dressing. Something my mom always had on the table in the summer time, we called it thunder and lightning, seriously. Brings back memories. This dish goes under many guises and names. It looks to me it's one of those universal recipes of making something out of what you have that's easy, nutritious and delicious. This variation looks yummy.

As a greek person, I'll say this is more or less spot on. I would personally substitute green peppers for some lettuce, but that's just personal preference. I can also say, we don't bother premixing the vinegar, salt and oregano. We just bring the salad to the table unseasoned and we season and mix it right before serving. As a kid I would always want to be the one who does the mixing and now my nieces like to do it :P

I've grown to love putting chunks of either wheat or barley paximadia in and letting it sit for about 10 minutes before eating. Soaks up the zoumi quite well

I made this last night because it was a really hot day, and it turned out really delicious. My boyfriend is vegan, so I used slabs of homemade vegan feta. I also used heirloom tomatoes from the farmers market. Even though I salted them for 30 mins in a colander, they still produced a lot of liquid in the bowl. Next time I'll try using a mess strainer instead, but I'll definitely be making this again real soon. Thanks once again, ATK!

We live on this salad in the summer. Warning: don’t make it with supermarket tomatoes, they don’t do it justice. Also we don’t drain the tomatoes. To each their own but the juice that accumulates at the bottom with some crusty bread is the best part. We called it the ζουμι

Why would anyone drain the juice?? To me it's the best part of making the salad! You have to finish it up by dipping some warm bread into it

Yes…my xeni husband now always wants his psomi so he can dunk in the zoumi…lol!! And not sure why they called this “hearty” Greek salad when it’s actually VILLAGE Greek salad! But…all delicious nonetheless!! 😊🤌

Yes. Adding this much salt everywhere and then also adding feta also makes it too salty.

Agreed. Plus with this much salt added everywhere adding the feta just makes it too salty.

A red onion doesn't have that much sulfur so you can skip this step entirely like the Hellenic people do.

Looks awesome!. I would change the kalamatas to a mix of olives, add marinated mushrooms, and add some chick peas for protein.

Sorry, capers are not classic here...I've had this salad all my life and we never used capers...I guess you could for variation, but definitely not classic!

@@myrdraal2001 There's also accessibility problems. Not many places carry imported feta. finding a PDO label is extremely difficult unless you go to a specialty cheese shop and are prepared to get over-charged

χωριάτικη σαλάτα = Peasant Salad. Lose the green peppers, vinegar, black pepper, and capers. I’ve never seen capers in a Greek Salad, what you showed was American-ized Greek Salad, not what you’d find in the average restaurant in Greece.

nothing is static; even in Greece cooks/chefs introduce new twists to old dishes. Athens is full of Carrefours, McDonalds, and every imaginable cuisine under the sun.

I'm half greek and my grandmother used to make greek food all the time when I was growing up. Nothing irks me more than someone saying greek salad and it's nothing like a traditional greek salad lol

I'm surprised that an American actually said χωριάτικη σαλάτα (village salad) correctly. You definitely don't need to drain and salt the tomatoes. As a matter of fact just make the entire salad in one bowl and save yourself the dishwashing. You're wasting a lot of the pepper cutting up the bell pepper that way. A red onion doesn't have the sulfuric punch of a white so you don't need to soak it at all. Don't make the dressing on the side. Just add it to the top of everything. Your olives look old and mushy. They don't need to be pitted. Why waste yet another serving dish? Just serve it in the bowl. With all of the salt you've added adding this feta on top will just make it too salty, unless your feta is the nasty imitation domestic feta not made in Hellas. The juice from the salad is delicious and if not eaten with a crusty piece of bread dunked right in to the dressing can be drunk as is.
