Green seasoning
1 large onion
3 sprigs of scallion/spring onion
5g thyme
2 scotch bonnets
5clove garlic
5 pimento seeds
3 to 5 g ginger
3/4 cup of oil
Pot on with a tbsp of oil
Dice half onion
Then add blended season
Cook for 5 minutes medium heat
Then 500 g mince beef.
Season with
1 Tsp onion powder
1 tbsps garlic powder/ granules
1 tbsp browning
2tbsp all purpose season. Good quality
40g panko bread crumbs
2 cups beef stock
15g beef fat
1 tbsp brown sugar
Salt and black pepper for taste
Cover on low heat then cook for 45 minutes give or take.
The dough
2 cups flour
1 Tsp baking powder
Salt to taste
100g unsalted butter
1 tbsp hot curry powder
2 to 3 Tsp curry powder for a vibrant rich colour
1 tbsp paprika
1 egg
1 Tsp brown sugar
1 cup cold milk
Salt and pepper to taste
Combine all ingredients and roll the dough.
After let it rest 15 to 20 minutes
After cutting and rolling the pastry flat add 15 to 20 g butter in cubes layered in to the dough. This you will need to do about 3 times maybe more until the butter is full incorporated into the dough and only then the pastry will be ready for the filling. Be careful not to the roll the dough/pastry out too thin like I did. U can always pause the video and look at how thick the dough was while I was adding the filling to the pastry before putting in it in the oven. 20 to 30 minutes in the oven at 350 Fahrenheit should cook the patties in the oven. Just in case keep on eye on it around the 15 minute mark to ensure no burning and adjust the oven accordingly.
