1 tablespoon All Chicken Seasoning

2 tablespoons Jamaican curry powder (adjust to taste)
1 Onion, finely chopped
3 Scallion, finely chopped
3 Cloves Garlic, minced
1 scotch bonnet pepper (optional, adjust to taste for heat)
1 tablespoon Corn Starch
2 tablespoons vegetable oil
1medium potato, peeled and cubed
1 carrot, peeled and sliced
1 bell pepper, diced ( or added color and flavor)
2 tablespoons chopped fresh thyme leaves or 4 thyme chunks
