JAMBALAYA
Spice mix:
* 1 tablespoon onion powder
* 1 tablespoon garlic powder
* 2 teaspoon salt
* 1tablespoon paprika
* 1 teaspoon cayenne pepper/chili pepper
Meats
* 2 chicken breasts (season with 1 teaspoon spice mix)
* ½ pounds shrimp (season with 1 teaspoon spice mix)
* 4 medium hot dogs or sausages(I used chicken hotdogs)
Veggies
* 1 small onions
* 3 garlic cloves
* 4 tomatoes
* 1 hot chili pepper
* 1 small red bell pepper
* 110g tomato paste
* 5 spring onions
* 3 ½ cup raw rice (long grain)
* 2 cups chicken stock
* 2 cups water
* 1 teaspoon salt
* ½ teaspoon thyme
* 1 tablespoon spice mix
* 1 chicken seasoning cube

I made this last night, it was excellent! I opted for beef sausage instead of hot dogs. Thank you it was fantastic and I'll definitely be reusing this recipe!

I always use rice as a side dish,. just boiled with water and butter. Sometimes giving it a bit of colour with green peas and yellow corn kernels. But this is amazing, rice as main dish, mixing it with the best flavors and textures. Especially with this red sauce, must taste great. Going to try it soon.

This recipe is so much like our Indian Pulao recipe. Just that we don't use so much tomato sauce and tomato puree in pulao. Nice recipe 👌👌

Thank you very much for this lovely Jambalaya Rice recipie..so amazing and delicious with Chicken,prawns and sausages..with Rice cooked seoerately in my steba Rice cooker,all I have to do is fry the chicken,prawns and sausages and onions,garlic and spices seperately,add tomatoes from the tin,added to the cooked rice..simply delicious..
