Rogan Josh is a signature dish from rich Kashmiri cuisine and is one of the main dishes of Kashmiri multi-course meal, the 'Wazwan'. Deriving its name from Persian word, 'Rogan' which means oil and 'Josh' which means intense heat is an apt name for this aromatic mutton dish that is cooked in oil at intense heat. While there are many contemporary and innovative mutton recipes but an authentic classic remains timeless and such is the heavenly taste of mutton rogan josh. Here are the ingredients you require to make Kashmiri Rogan Josh:
- Mustard Oil 2-3 tbsps
- Water 2 tsp
- Young goat Meat
- Cinnamon 10 gms
- Cloves 2 gms
- Cardamom green 4 gms
- Mace 1 blade
- 1 Dried Bay Leaf
- Big Cardamom 10 gms
- One Cup Kashmiri Onions fried
- Tomatoes 2 Big
- Asafoetida 1 tbsp
- Ginger Garlic Paste 100 ml
- Deghi Mirch 3 tbsp
- Kashmiri Turmeric Powder 20 gms
- Salt as per Taste
- Ratan Jot 1 Clove
- Saffron 5 gms
- Fennel Powder 1 tsp
- Ginger Powder 2 tsp
- Coriander Leaves Chopped

We actually don't use Onion-Garlic. We use Ginger-Hing (Asafoetida) and Ratanjot infused in oil. Don't use Kashmiri Chilli Powder, use the dried Kashmiri Chillies and soak them in hot water a bit and make paste. You'll be surprised by the color and taste even if you're not using Ratanjot as most people might not have access to that. And no need to add Saffron either. Why are you adding Tomatoes to Rogan Josh ? Where's the Yogurt ? This is a winter dish, add Yogurt please to please your guts :)) LOL !! My ingredients : Mutton (bone pieces) + Mustard Oil + Ginger powder (paste if not available) + Hing (Asafoetida) + Kashmiri Red Chillies + Ratanjot + Cinnamon + Cardamon + Cloves + Black Pepper + Fennel powder + Yogurt. DONE ! Edit : Don't forget to add salt like I did :P LOL !

This is the real recipie ! Thanks. Yougurt is must and strict no no to onion and tomato. Rogan josh mainly uses all dry spices only. No paste please. But i agree, if this would have been called a fusion dish it would have bee n more authentic

@Chop Chop Chopra. This is not authentic Kashmiri Rogan Josh. ( Kashmiris don't use onions, tomatoes, ginger garlic paste.) Let me share you the procedure in kashmiri style. 1. take oil, add hing, cloves, green cardamom, black cardamon cinnamon sticks. 2. in about 30-45 seconds add Goat/Lamb meat ( preferably Lamb). 3. Cook it for 15 mins. 4. Add Kashmiri Mirch ( depending on your spice level), little turmeric. Stir and cook for another 5 mins. 5. Add Curd( Dahi) cook for another 2-3 minutes. 6. Add Water ( cook for about 2 mins) then add Souf( Fennel Powder), Shont( Ginger Powder) and Salt. 7. Let it cook for another 5-6 mins. 8. Lastly, add jeera and green cardamom mixture for finishing touch. Cook another 3-4 minutes. 9. Now eat with Rice. Let me know if you need more authentic Kashmiri recipe. - From a Kashmiri.

+ANKIT KHUSHU Exactly. I've seen many people doing the same thing. They modify the original receipies and name it in Kashmiri style. I'm not sure but I guess Roganjosh doesn't even have so much curry.

ANKIT KHUSHU That is the kashmiri pandit version of the dish. The one prepared as part of wazwan has onion and garlic as well as tomatoes, but no yogurt.

I was following this recipe today and as soon as i put drops of water on the oil, it became a mess, catch fire on the utensil, got a narrow escape. :(

Firdaus Anjum Khan Lol that's not nice. Smoke the oil but don't put water. Instead let the smoking oil cool down a little and then add the pieces of meat.

Firdaus Anjum Khan , don't put drops or pour water in oil, carefully sprinkle your wet fingers "chita/chitaka maro"(told by someone personally) here chef threw it with small bowl,end of d day he is professional and use bit deep pan n keep dhakkan ready to cover if needed, don't forget to reduce d heat or remove pan from heat for d moment n no shallow frypan..actually d method is correct.

It is just for color. You can use coxcomb flower ( powder). If not available, kashmiri/ degi mirch will impart the color

Please don't add water in the hot oil, it is meant for big restaurant cooking by professional chefs and not small kitchens.. I almost burnt down my kitchen. My mistake I should have checked the comments here before..chef u should be more careful while showing such dangerous stuff.. Make people more aware of it.. Very irresponsible!!!

Chef Ajay Chopra this is the most outrageous recipe for Kashmiri Rogan Josh. Honestly the Kashmiris will be crying out laughing at this recipe with Onions and Tomatoes. This is actually the recipe for Rajinder da Dhaba mutton curry. I pity the people who will make this and call it Rogan Josh.

Chef Ajay, you have used 5gems of saffron!! in a single dish!!! pl go & check the cost of it. In Kasmir-Pampore to be specific-it's cost 250/- a gram. only saffron will cost Rs. 1250!!!!

Not at all authentic kashmiri Rogan Josh. In spite of kashmiri red Chilli powder ,the dish color came out to be burnt brown colour. and all the main rogan Josh spices ie javitri, kali elaichi etc u diped in the curry ....why ? u have to grind and let it be in the gravy. and tomatoes? ?? . u better learn what kashmiri recipes really are!

@@doreensika837 mutton masala has a thicker , onion and tomato based gravy. It is generally spicier than Rogan Josh. Rogan Josh is focused on the meats natural flavour instead of the spices.
