Kasoy!!!
Kasoy is a Mien noodle soup, Lao people make it too depending on what region you’re from. The version I’m making is basically a beef based soup, you then add (jin ku) which is a ground pork mixture cooked with tomatoes, fermented soybean paste(dopc zeic) and spices. Yes it sounds weird to some of y’all but it’s not, it’s so good! You can use whichever bones you want for the soup base. This soup is up there as one of my favorite noodle soup now 😋
Soup:
A few lbs of your choice of bones, beef/oxtail/pork/chicken feet(I like beef)
My pot was 3-4 gallons of water
3-4 tbsp Chicken bouillon
1 tap salt
4-5 tbsp fish sauce
Daikon
Carrot
Kasoy meat:
3 lbs ground pork
Oil
Chopped Garlic (everything is to your preference, you can put how ever much garlic you want I like a lot I put a heaping cup)
1 large Tomato, diced
Tomato paste(one little jar)
Dopc zeic- Fermented bean paste(few table spoons-depends how funky you want it)
1 tbsp Thai red curry
Chili oil(your preference)
1/4 tsp Salt
1-2tbsp fish sauce
1-2 tbsp chicken bouillon
3 cans of water(I used the tomato paste can, this is up to you, how ever watery you like it you can add more or less)
Extras&toppings:
(all of these are optional)
Cabbage
Meatballs
Fish cakes
Shrimp
Cilantro
Green onions
Fried garlic
Fried shallots
Tamarind powder
When I want it sweet I like using sweet soy sauce instead of hoisin (not a fan of hoisin)
Chili oil
Siracha
Jalapeño
