We're making moonshine mash with Jesse, the master distiller behind ‪@StillIt‬ . A lot of people think they're making "real" mash with cracked corn, which is feed corn that has been lightly milled. But if it isn't done right, then it isn't real corn whiskey moonshine mash.

I do the pour over method. I buy cracked corn. 25 lbs 25 lbs brown sugar, amylase, daddy yeast. Heat water to 170, pour into the can and cook for an hour. Then amylase at 130, sugars and stir. Then at 90 add yeast. Takes 7 days or so. Then distill 8 gal in a 10 gallon still. I get 120-150 proof and about 2.5-3 gallons of shine.

Something that people don't realize is that you don't have to brew a mash. You can distill commercially made beer and wine. Whether it's economically feasible or not is something to research.

My grandfather malted with corn also. I grew up hearing stories of my 10 yo father carrying jugs of moonshine whiskey. They did it because corn was a nickel a bushel or something but whisky was a dollar a jug. They were afraid to use sugar because you had to buy lots of it but they used it to make rye whiskey not corn liquor.

Here in North Carolina it is illegal to manufacture "spiritous liquor" including moonshine without a license. Additionally selling or possessing liquor without paying the 30% excise tax will also get you nailed. In spite of that "bootlegging" remains popular here in my state and is in fact how NASCAR got its start. (Long story short) Interestingly, the permit for a distillary here is only $300 which can pay for itself with a decent run of legal liquor. Just remember the revenuer's cut... The main problem with North Carolina is that it is an ABC state. Meaning that the state holds a monopoly on Liquor sales and distribution. If I want a bottle of my favorite rye, I have to go to an "ABC" (alcoholic beverage control commission) store and pay what ever the hell the state wants me to pay for it (usually considerably more than non ABC states). That's pretty much why they don't want a lot of independent distillers. Why pay $50 for a quart of shine when my neighbors friends cousin's brother-in-law will secretly sell me one for $25.

Grian whiskey truly is more work than its worth lol just buy a few bags of frozen fruit, mush it up in boiling hot water, let cool, add peptic enzymes then let cool some more, add yeast and wait for 5 to 7 days lol no need to make a slop for 2 hours and clean for 2 hrs... the way i do it the cooling process takes the longest... stirring grain for 90 mins is for the birds and just makes liquor everyone talks about but nobody truly wants lol not a high demand on "cheap grain liquor" lol

I'm curious why it's necessary to mill the corn, since it's so hard to do? Why not just simmer it for a long time as ppl do with preparing dry beans for food, then blend it, maybe with a hand held blender once it's soft? And btw, when I volunteered at a county park that was an old farm, they had a corn grinder powered by a large electric motor for grinding field corn into hog feed. It ground it pretty fine.

Disclaimer: I'm not a lawyer. Do your own damn research. So much wrong in these comments. It is federally illegal to distill in the U.S. without special licensing, etc. Many states that go with that also make it illegal to even own a still. It is legal to distill for personal use in Alaska, Arizona, Massachusetts, and Missouri (when I checked last night, anyway). Those states' laws do, in fact, supercede federal law within their borders, as this is literally the main point of having separate, sovereign states. Look into the DEA going after California dispensaries. Even Obama made this point about federal agencies not respecting states' rights. They're most likely just covering their bases saying "100% illegal" because KZfaq.

July 11 (Reuters) - A federal judge in Texas has ruled that a 156-year-old ban on at-home distilling is unconstitutional, siding with a group that advocates for legalizing the ability of people to produce spirits like whiskey and bourbon for their personal consumption. U.S. District Judge Mark Pittman, an appointee of Republican former President Donald Trump in Fort Worth, on Wednesday agreed with, opens new tab the Hobby Distillers Association's lawyers that the longstanding ban exceeded Congress's taxing power and ran afoul of the U.S. Constitution's Commerce Clause.

Its not illegal to distill your own in all states. In my state, you can make and distill moonshine. But you are limited to 100 gallons annually per each household, and it is for personal use only. It cannot be sold. That would lead to arrest. Also, someone 21 or older has to live on the property and it must be their permanent residence. There is also a permit requirement. Private citizens are required to request a permit from the state before making moonshine. Likely so the state boys can keep an eye on production to a degree. And it probably has something to do with the thing being at odds with Federal law. A permit would nullify that maybe? I don't know. I just know what I read in the State code.
