Tree climbing 81 year old Ada shares her recipe for a mushroom pasta dish called taglioline con i pioppini. These little mushrooms are commonly found growing on poplar trees; their scientific name is Agrocybe aegerita.
If you cannot find them, use whatever is available: button, shiitake, hen of the woods, chanterelles (lucky you!) and so on.
For the sauce, Ada used:
1/2 onion, one garlic clove, around 500g mushrooms, a small glass of white wine, a mushroom stock cube (optional), butter, a little cream mixed with powdered dried porcini. To serve: chopped parsley and grated Parmigiano.
For the pasta: 1 egg for every 100g 00 flour. Incidentally 'taglioline' is the local way of saying 'tagliolini' - thin tagliatelle.

In case anyone's looking for the mushrooms to recreate this dish they are called 𝘊𝘺𝘤𝘭𝘰𝘤𝘺𝘣𝘦 𝘢𝘦𝘨𝘦𝘳𝘪𝘵𝘢, Pioppino, Black Poplar or in Japanese cuisine Yanagi-matsutake, in Chinese cuisine they are Cha shu gu . You can get them dried in Asian supermarkets, buy them fresh online or easily grow them yourself by inoculating a beech log in your garden. I love dishes like this, fresh mushrooms with pasta are just heaven. Vicky, I was wondering in the decades to come when you're eligible to be a Pasta Granny yourself, what would be the signature pasta dish that you would be filmed making? 🍝

She scrambles up a ladder to check her mushroom “honey hole” and uses her own eggs. For “not a professional cook” you could have fooled me. Her family is quite fortunate to have such a pro cook for them, although my guess is that she considers herself fortunate, too. She is no joke! Another four star episode!

I've been watching many grannies make pasta over the years on your channel. This one is one of the best. Not only does she have undeniable artisanal chops and skill but also just the right amount of modesty and a sense of humor. Another wonderful element of your videos (this one included) is the thumb in the eye of the countless perfectionists and fetishizers of all things Italian who might have you believe that everyone in Italy makes EVERYTHING from SCRATCH the OLD WAY and convenience products are a sacrilege. We see time and time again the grannies using things like bouillon cubes, flavored creams, things from the freezer, etc. This is real cooking in the real world and it tastes amazing! Keep them coming, British lady!

I love the special cutting board she used and how neatly she placed the pasta into a nest. I wonder if the long cutting board was custom made. Haven't seen one ever. 🙂

Ms. Vicky another great pasta Granny with great food, she is a hard worker & especially with the ladder climbing, we do make something similar in Appalachia but not with the sme mushrooms all the time, mostly the pasta would be dry boxed fettucine, but a variety of mushrooms are available & we have an abundance of poplar trees among others like hickory, cedar, oak, elm, etc..., we have prized morels, button, crimini/baby bella/portabella, & one that you may have to google to believe called a puff ball mushrooms as it is the size of a round soccer/football/fut'bol & all are used as available in shady/damp valleys. Prepared nearly the same as in the video except mushrooms would be sauted in bacon grease, & folks reading this: if you are not sure if a wild mushroom is safe to eat for sure DO NOT EAT IT !, puff ball mushrooms should be solid/pure white on the inside & sliced then diced for the saute' pan, God Bless everyone & please stay safe

Oh it's always a happy day when you find a giant puffball isn't it!? If myself or one of my fungi friends does find one we always call each other & meet up to eat it. A big slice of fried puffball to act as an edible plate with other wild mushrooms & some poached eggs all sitting on top of it, beautiful.

Nice collection of rolling pins and cutting boards she has for her different pastas. Love that copper scale hanging on the wall. I kept rewinding just to look at her beautiful hands and slim fingers. Very good tip for the non-perfumed table cloth. Same should apply to all kitchen towels. I hope the conflict in Ukraine will not effect the supply and price of flour/wheat in the future.... !

This fungi is actually now called Cyclocybe cylindracea. You can find it here in the UK, but it's way less common due to the rarity of black poplar. It's thought to be one of the oldest cultivated mushrooms in Europe and was loved by the Romans. The same method of cultivation is still used in Italy today, where poplar logs are soaked and rubbed with the mushroom's gills, before being shallowly buried. You've actually previously filmed a Nonna harvesting these mushrooms from this method.

I was raised in her same town and I also had a grandma who taught me how to make pasta. Here's what grannies here do in their day to day lives: if they have a garden they do gardening, plant flowers, grow their own vegetables and a few of them have chickens so they will look after them. They cook, they go on bike rides in the fields around their house, they have tea with their friends, they go to church, they go to the local farmers market, they watch tv, they read books, they knit, they do intricate handmade embroideries, they do the house chores. In summer they will drive 1 and a half hour to the beach with their husbands and stay there for a couple of weeks. That's pretty much all they do

I like to put cream of mushroom soup on pasta with smoked salmon. I think that's French. They might do it in Northern Italy. I'm American so I don't know. I've been to restaurants enough to know Italians don't mix dairy with seafood? No cheese on the linguine with seafood. The best Italian food is the stuff like tons of it. Italians make great food and it is in their hearts to share it with Americans in limited form.

The product is called "panna chef ai funghi porcini" by parmalat. It's sold in grocery stores in italy

@@tanyaa4266 some of the online Italian markets have it. I think they just call it cooking cream. If all you can find is the plain one, you could probably just grind some dried mushrooms and mix it together.

I read that long time ago they used to throw pasta water on That tree (pioppo in Italian no idea how to write it in english) and mushrooms "pioppini" could grow on it.
