This is a British Indian style take on one of the country's favourite Curries. This dish is named from the city of Madras - now called Chennai - which is the populous capital of the South Indian state of Tamil Nadu. As with most traditional Indian dishes there are many different variations on the recipe - this one is a hearty curry with the spices of coriander, cumin, turmeric and chilli. I think it is the perfect winter warmer, especially if you like your curries nice and spicy. A Madras is often served with a cooling raita on the side.

3 Tbsp Veg Oil
1 Tsp heaped fresh Garlic. Crushed or finely chopped
2 Tsp Mild Madras Powder
2 Tsp Hot Chilli Powder
2 Tsp Coriander Powder
1 Tsp Cumin Powder
1 Tsp Ginger Powder
1 Tsp Turmeric Powder
1 Tsp Jagery Goor or Sugar
1 Tsp Methi Leaves (Optional)
1/2 Tsp Garam Masala Powder
3 Tbsp watered down Tomato paste (Puree)
1/2 to 1 Tsp salt

Al thank you so much for your videos.I'm Irish living in Canada and I love curry. Followed all your steps to a t, from base gravy to pre cooked chicken ,chicken madras and your plain basmati rice . It was honestly one of the nicest curries I've had . Keep up the good work mate

Ok, I made this curry last night for 5 people but I used Al’s chicken tikka instead. Everyone commented that it was better than their local Indian takeaway!…….I was a bit nervous because my base gravy although well blended was a bit thick, so I added more water to get a good consistency. Also I didn’t have a pan like Al uses so a large aluminium saucepan had to do. As I was cooking for 5, I just doubled the quantity of spices except the chili powder, followed Al’s recipe and just used more base gravy! I cooked it for around 10-15 minutes!…..I was not sure how it was going to turn out but it was fantastic!……Thanks Al…….Just to show this can be scaled up and you don’t need to use the same utensils as the restaurant. 👍👍👍

Cooked this last night and it was absolutely lovely. Really deep flavours with some heat from the chilli. I've now cooked most of your recipes and this is probably my favourite. Cooking chicken biryani next week because wife wants something bit milder. Thanks Al you have transformed our saturday nights!!

I just cooked this following your instructions exactly using your gravy base. WOW! Thanks Al. You're the man. It came out absolutely PERFECTLY. In fact my local takeaway had been going off the boil recently. If I had bought this from the local I would have been really happy. Thanks for your efforts and taking the time to upload these tutorials mate. If you're others are as good as this Madras you're going to save me around £2000 a year!

I've been making homemade curry for years following various recipes, and not a single time has it EVER been close to a takeaway/restaurant style curry; they were 'authentic', but now I realise they were authentic to India, not British Indian. Followed your base gravy and madras video today and the result is absolutely incredible; the quality/taste/consistency is EXACTLY like in the restaurants - costs a fraction of the price too! Hey new to this channel dieing to make the madras but is it worth making the base gravy for 1-2 currys?? Is it as easy as just useing a a quater of the ingredients for ur base

@@grapsta When I cook traditional Indian I never use a pre-made base gravy or pre-cooked meat. Traditional Indian curries usually start with diced onions, garlic/ginger and tomato, adding the spices once the onions have become soft and translucent. Then the raw meat is added, water is added and then the dish is covered to cook the meat. The water will reduce to leave a curry with gravy. Thats how I do it anyway. Check out Spice Eats youtube channel for recipes that don't use base gravy. Al is the best for restaurant curries though!

Been making curries for years, authentic and with base gravy (have a big batch on the stove now😁). Out of all the recipes I've used over the years this Madras combined with your base gravy was amazing !! . Going to make one this evening .the missus loved it also. Good work 👍💥

Made this earlier and it was fabulous. I have been eating curry for nearly 40 years and this is the closest I have ever come to creating my own restaurant style Chicken Madras. Think I'll try the Garlic Chilli Chicken next. Great recipes, keep them coming.

Really good Al, This was my first ever curry when I was a young fella and lived in London, loved it, my nickname used to be Dhasnsak. I have been cooking curry many years, I left the UK in 2003 and move not to Australia, all I Have ever missed from uk is a good curry (can't get the same in Aus). You haven unlocked the secrets (base gravy) and taken me back to the food I love. Thank you so much. I can now make a curry in Australia as good as I used to get in the UK over ten years ago. Dhasnsak. Madras and Vindaloo all spot on. Cheers Al.

Thanks Al for this recipe. I have followed the instruction of this video, the base gravy and the precooked chicken video to make this chicken madras. It worked out perfectly, and tasted amazingly. On the list of ingredients you miss the pot just under the sugar methi leaves or something but you add it in just after the salt what is this and how much do you need please

I had Parathas and rice on the go as well and the curry ended up slightly drier than I had intended when I was dishing up but taking nothing from your recipe mate, was a lovely curry, thanks

This recipe has gone down very well in our household - thanks! I live in Northern Scotland and my favourite curry is South Indian Garlic Chilli. I've made your Garlic Chilli, but it's very different - SIGC is much more tomatoey with garlic cloves all through it. Do you have a separate recipe? Thanks for all your excellent work!

Al, I have made this curry along with your Pathia probably 50 times each on average... haven’t bought a takeaway curry for over 6 months (since I started cooking your recipes). Al, thanks very much for sharing this recipe as well as the base gravy 2, I've been attempting to make Madras curries for the last 20 or so years & I've got to say that following your recipe with the base gravy 2 is as close as I've ever got it, the Akhni Stock - seasoned water has made a massive difference as well as the coconut milk & condensed milk giving the flavour extra layers as you said, the balance of flavours was excellent, I personally prefer the sour flavour with the Madras so will add a little tamarind & lemon juice next time but am really impressed with your cooking skills & recipe, thanks again for sharing, massive thumbs up from me!

Hi, in the listing of spices Al doesn't say what the upper green leaves are, and I can't quite catch it during the adding. Mecca leaves??? hope you can help, I'm just getting everything ordered! cheers, Martin.

This is a brilliant one Al, I added eight finely chopped green chilies and finely chopped fresh ginger to this recipe at the start when you added just the garlic. Keep up the good work bro and have a fantastic holiday.

Hi mate, loving the vids! I’m going to start trying a few and copy your recipes 👍 could I ask where you get all your spices from, have you got a link? I find the supermarkets are a bit hit and miss with certain stuff especially chillies. Thanks again mate (I’m in the UK too) Scott
