Tannins are what makes pickles crunchy, to be technical. Adding a bay leaf to each bottle, will add tannins and crunch to your pickles. Cutting off the blossom end of at least 1/16th of an inch, eliminates the enzyme that can make pickles soft, as well as unsafe to eat!

Usually people cut the blossom end of the cucumber off as apparently there’s an enzyme that can keep cucumbers from keeping they’re crunch in canning.

You can also soak your slices in a salt water ice bath overnight, just be sure to rinse well before packing them into jars!

That stem end you cut cos looks nasty. For "crunchyness" of pickles you can use mustard seeds and of course horseradish (pieces of it if is a small jar), and also salt with iodine will soften your pickles, so use salt without iodine (be aware that not all "kusher" salt is iodine free). The salt with iodine is a modern "invention" (silly if you ask me), that's why today pickles are usually bad. Hope that's helpful, even if is late. :)

Me neither but we have put them up for years and also the sweet and Bread and Butter pickles. For generations pickling was the only way of making the cucumbers last and it included onions, garlic and peppers. Obviously there were beets, eggs, and then Sauerkraut which is fermented as well. We need to keep these skills a live.

It’s not a Jewish original thing. Pickling food goes way back to around 2000 b.c. And pickled cucumbers originated from India. So I have no idea why this guy is trying to take credit for that or say that his Jewish ancestors invented it or whatever (cause that is totally false btw)

Where's the part where you make the brine solution. I heard you mention 20 cups water and 3/4 cups vinegar. No mention of salt.

"Be careful to sterilize EVERYTHING! Very important!" Then he proceeds to handle raw bacon in the middle of the process and doesn't wash hands before handling pickles again.

Cutting off the blossom end a little is supposed to keep them crispy, some enzyme there makes them soft.

Just saw this. I made some Bread and Butter pickles this summer as well as some Sweet Mustard Pickles based on my Aunt's recipe. B&B turned out great, the Mustard not so great.

I like Sam the Cooking Guy. I love the reality and different takes on preparing foods. Don’t always agree,but the outside thinking is great. It’s a great way of boosting flavor and showing how prepping is a huge pan in the ass.

If you don't cut the ends off(blossom end) your pickles will be soft. The blossom end of the cucumber has an enzyme that softens cucs when pickled. You don't need to cut off much just the tip

MY mom made sour and dill pickles without using vinegar......Sour and half sour pickles were made with just SALT and WATER.....Dill pickles were made with SALT and WATER and fresh DILL from the garden......You can add PICKLING SPICES too......NO VINEGAR...

The end of the cucumbers nee to be completely clean of bloom or stem there is an enzime that will cause the pickle to be soft

Always cut the vine end off or they will get soft. Cut the end off and they stay crunchie. Better wash you hands before you touch the pickles again.

If you cut off the blossom end of the cucumber it will remove an enzyme that makes your pickles soft.

The half soft and half sour conundrum you guys experienced may be due to not cutting the ends off the cucumbers. Americas test kitchen says there's an enzyme in the blossom end of cucumbers that cause them to go limp, so they recommend cutting the ends off.

Pickling dill pickles is likely the easiest thing to do, then the lame ass bacon basket (huge ass epic fail) but somehow the puppy playing with the squeaky toy made everything seam better in some weird way that I do not understand. Loosing me , lost me , in come the squeaky playing pooches and now everything is kosher. Your show is so many levels its hard to comprehend. You sir are a mad cursing genius. Keep up the great work.
