To make dough:
Soft, Fluffy, and Airy Ring Doughnut Recipe:
Ingredients/Measurements
3 Cups All Purpose flour (brown or granulated)
1/2 tbsp. active dry yeast
1/4 cup sugar
2 Eggs (1whole egg + 1 egg yoke)
1 tsp. mixed spice (cinnamon & Nutmeg)
Pinch of salt
1/2 cup water
1/2 cup milk
1 tbsp. butter
-Mix dough with whisk then mix by hand
-Knead dough well to get springy and elastic dough
NB: Rest dough for 45 minutes at room temperature covered to allow dough to rise
-Roll out dough to 1/4 inch evenly after resting
-Use donut cutter or substitute with cup/cork etc.
To fry donuts:
Fry donuts on both sides until golden brown on low heat in vegetable oil.
Allow donuts to drain on rack after frying
To make glaze:
1 cup powdered sugar
1/4 cup canned coconut milk
Small splash of rum
NB: dip donuts in glaze and cover both sides with glaze
