Mexican pozole whether it be a tradition in your home or a first time surprise it is sure to become an instant favorite, the combination of cool and spicy ingredients make it unique in taste for the whole family.
INGREDIENTS
1 lb. pigs feet (cut into pieces)
1 1/2 lb. country style ribs (cubed)
1 & 1/2 lb. pork butt (cubed)
1 medium onion (cut in half)
5 large bay leaves
2 garlic bulbs (all cloves skin removed and ground in molcajete) optional
1 tsp whole cumin (ground in molcajete)
1 tsp peppercorns (ground in molcajete
1 & 1/2 tsp oregano
1 tsp marjoram
red chili sauce (from blender)
salt (to your liking)
3 1lb cans hominy (rinsed well)
Water to cover meat (you decide, don't over do it)
● you can add some chicken bouillon if you wish, that's how my Ron loves it.
RED CHILI SAUCE
5 guajillo chilis
5 ancho chilis
1/4 small onion
2 corn tortillas (cut in pieces)
enough water to blend (or liquid from chilis)
SIDES
shredded cabbage
sliced radishes
chopped onions
chopped cilantro
hot salsa (optional)
fresh lime juice
corn chips
• remove bay leaves before serving
• caution with bones

Rachael, I taught gourmet cooking for many years, I have to say you are brilliant at teaching cooking. I love Mexican food and have learned so much from you. I’m a 59 yr old Hispanic that never learned how to cook nor do I enjoy it. so of course it shows in my food. At 45 I found a “Mexican cookbook” and have had pretty good luck with the recipes, they me me look like a good cook, I impressed myself. After finding you and your recipes I see that I can do so much better. I’d love to have a couple of cookbooks also to give as gifts. I’m having the whole family over for Thanksgiving and I’m going to wow! them with your Pozole. I’ll let you know how it turns out.

Am i the only one that notícies that Rachel cooks for real and eats what she cooks. Her patience in the kitchen makes cooking an art, not a show piece. She really teaches, not just go through the motion of intertaining.

Rachel , I want to thank you for your delicious and authentic Mexican recipes. My father taught my mom how to cook, but since we lost him about 8yrs ago we lost a lot of the recipes he knew from his mother. You’ve given me a taste of my childhood and the opportunity to pass on those flavors to my children. Thank you so very much , you don’t know how much it is appreciated

Honestly, I never wanted to try Pozole Soup. Your recipe and seasoning looking so delicious. I have all the ingredients in my pantry to make this delicious soup. Thank you so much for showing the proper way to make this delicious soup. I had it for the first time some 30+ yrs ago when my Aunt made a huge pot. I was never able to get her to share her recipe. And have tried over the yrs to replicate it but it was never the same until I found you and your recipe. I quickly went and got everything for it. Oh my goodness the memories it brought back. I had it for dinner that night and I canned every precious drop that was left so I could enjoy it later. I so enjoy watching you cook everything. And watching you make different things like you flour and corn tortillas and tamelas. I wish I had my family at home (kids are all grown). Because I could cook up a storm.

Delicious, the way my mother taught me. She was raised in Texas. I use California chili powder not to hot instead of the whole chiles. I also eat mine with some lemon. You are a wonderful cook.

well, I love menudo and pozole! For some reason here in Florida, hominy is not included in either dish!! I take it home and add cooked hominy! Now I will make it from your videos!! Thank you Rachel!

Okay, my brother made pozole yesterday following your recipe and I had posted a comment saying we were not impressed because we thought it was too bland. We had tasted it while it was still cooking and almost done but we got ahead of ourselves. When it was completely done and we sat down to eat supper....it was really good! Thank you Rachel for sharing your recipe. We really enjoyed it and we even shared it with a neighbor!👍👍👍

I have tasted and loved true Mexican food at friends homes but never tried to make it myself because I was so close to everyone, I didn't have to cook. Now I am far away from my friends with no access to real Mexican food (restaurants around me have bastardized the food to make it more appealing to uncultured American palates and it's sad). What a great idea to put the spices, including the garlic, in with the meat right at the beginning rather than with the chiles towards the end. That will make a big difference, and yours is the first recipe I've seen (of many) that do it. That's how I'll be doing it from now on. Pozole is my favorite along with al pastor. Huge thanks!

Before I start into making my favorite dishes or my adult children's favorites (the adult and teenage grands are well trained in how to make it all disappear), I always get a refresher from you. Ms. Rachel I absolutely love your recipes. I'd have to agree with your followers. You should put out a cook book. We need it for this younger generations. They need to know all the essentials to be able to survive. They are way distracted with technology. Our Elders are going home then so forth. This cook book would be extremely helpful. Hi Rachel, I tried your pozole recipe yesterday, and it came out soooo delicious! The ground spices and the hojas de laurel really put it over the top in flavor. I have been binge watching your channel for 2 or 3 days. I have one complaint....I can't test taste with you. This posole dish I had about 50 years ago when I spent a few months in Mexico...Celaya, Guanajuato. it was the best soup ever. Thank you, Rachel for taking me back to .my wonderful memories.

Dear Rachel I have never made Pozole before . I was asked to make some for a cowboy round up to get the calves branded etc, well I must tell you I followed your recipe along with your salsa 💃 and Rachel it was a great hit with the cowboys!! Thank you so much you are a legend to me ♥️♥️♥️

Hi Rachael, Your cooking and teaching methods are very precise and easy to follow. You are so personable which makes it a pleasure to learn from you. I made the pozole for "My Roy" and he loved it! I was born and raised in the US and my ethnicity is Mexican. My mom is from Texas and dad from Mexico. My mom was not much for teaching my sisters and I how to cook, we were more in charge of cleaning house. When I married I always cooked American dishes and only ate Mexican foods from restaurants. A few years now I have tried to start cooking more Mexican dishes with some success but not totally authentic. And guess what I think you are literally the answer to my prayers. I plan on going through all of your recipes kinda like the movie Julia and Julie, based on Julia Childs (if you have not seen it you will enjoy it). As you would say "So" here I go!

in from Sacramento California and as a young child we lived in a town called Williams and it was a small migrant farming community and we had wonderful Hispanic god parents as our neighbors that my mom n brother had the privilege to know and love so much my godmommas used to cook with all the women and I just loved those moments and as a adult n moved to Maine I feel like watching your videos is just right back when I was a child and get to cook along with you now in my own kitchen and share with my children I loveeeee the authentic recipes you do they are exactly like remember as a child so much love into your dishes ❤❤❤
