Ok seriusly this is one of the best video i ever made i worlke so hard, to be able to show you, HOW TO MAKE THE PERFECT DOUGH in your house for the best , focaccia barese ever! Also this is probably the only video where i talk a little bit of my past.. So i dedicate this video to my grandma, that unfortunally past away 5 years agot, but every time i make focaccia i always remember her, SO THIS VIDEO IS FOR YOU NONNA ANGELA.
RECIPE:
N1. PREPARE THE POOLISH
- 200ml water
- 200 gr. flour
-5 gr dry yeast
- 5 gr. honey
Rest 1h room temp, then overnight in the fridge.
N.2 MAKE The focaccia dough
-POOLISH (ALL)
-60 gr. flour
-8 gr, salt

N1. PREPARARE IL POOLISH

Riposare 1h di temperatura ambiente, dopo una notte in frigorifero.
N2. PREPARIAMO La focaccia
-POLISH (Tutto)
-60 gr. Farina
-8 gr, sale

وصفة:
رقم 1. تحضير البركة
- 200 مل ماء
- 200 غرام طحين
-5 غرام خميرة جافة
- 5 غرام. عسل
استرح درجة حرارة الغرفة لمدة ساعة ، ثم بين عشية وضحاها في الثلاجة.
عجينة الكعكة
-البولش (الكل)
-60 غرام. طحين
-8 غرام ملح

Some people might not like all these extra things that you include in the video, but I love that you share all these memories with us because they are part of the recipe, you can follow a recipe step by step but if your heart is not on it, it will never taste the same!! Vito, I made this for my daughter's Mother-in-law. She is 72 and 100% Italian, but she says she cannot cook at all. Not even instant oatmeal. I made your Grandmother's focaccia and my daughter's Mother-in-law cried. She told me it was exactly like her mother made it at home. Thank you for posting this amazing recipe. Focaccia update. My kids were fighting over the leftover focaccia from yesterday. This is a winner. They don't seem to like pizza as much, but your grandma's focaccia is hands down amazing. This morning both asking me to make more today. Thanks for sharing, maestro.

Aside from the fantastic focaccia recipe of your grandma and the very detailed step-by-step instructions of how to make it, I find this video is the best amongst all of your videos. I cooked this amazing focaccia today. I've eaten this before from bakery, but nothing like making it yourself and eating it strait out of the oven. It’s an honor to use your grandmother’s recipe. I’m about to put it in the oven as soon as I finish typing this. It more closely follows the other video with a double fermentation where you mix the olives into the dough. Tonight I make the bread to go with dinner. (Pasta with Brie cheese, basil and olive oil). Vito, I made this as my 1st-ever fermented dough project and it turned out fantastic thanks to your thorough, detailed intructions. I decided to top mine with shallots (and some red onion) caramelized in a fig balsamic and paired with some fresh tarragon. I cooked it in a clay earthenware glazed vessel that had a lid on it, by cooking covered for ~12 minutes at 500^F to help the stoneware to come to temp even without using a pizza stone, then took off the lid and cooked about 18 minutes and it turned out a beautiful golden brown with phenomenal deep golden-brown crust that was super light and crunchy just like you said. I accidentally forgot to start the timer for the second 1-hour room-temp rest and only realized after almost 2 hours, so it was a tiny bit over-proofed and therefore maybe a little too loosely fluffy inside, but still delicious! Thank you for sharing your passion for good food with an open heart and no secrets or guessing games for us trying to follow along. You gave me the gift of a successful 1st try, and a way to engage with my Italian heritage I otherwise might never have had due to personal circumstance. I don’t want to share pictures because I’m too scared of Twitter and want to avoid Facebook which now owns Instagram, and I wasn’t able to find any other contact for you, so I hope you read this comment and know that you helped me feel seen and cared for as an individual, and I appreciate your generosity of spirit and wish you well❤️

Hi Vito! I tried your Foccia Barese recipe today and I turned out almost the same! It was really tasty and my family also enjoyed it! I couldn’t get the same rise as you maybe because of the quality of yeast or flour! But still it was delicious. I regularly watch your videos and love your content and history. Love from India 🇮🇳

Did you use 00 flour ? They are stronger than the typical maida which is equivalent to their low protein pastry flour or all purpose flour. For pizza and Italian breads 00 is totally worth it.

6:12 - One trick John Kirkwood uses, is putting a little bit of olive oil on the dough-side of the cling-film and spreading it around with your fingers, such that it will not stick when you come back to peel it off. :- ) Thank you for sharing all this valueable, long-accumulated experience for free to the world!

Loved the story! I'm first born in the USA, love hearing the immigrants stories. So, WOW!!!! Chose this one because of your great family story, first time making focaccia, it turned out awesome. Doubled the recipe, made 4 different flavors, rosemary, salt, tomato and parmesian served it with shrimp and vodka cream sauce with penne pasta, just great! Thanks!

I grew up eating focaccia from a bakery in San Fransisco as a kid. For the past couple of days I've been eating some of the BEST focaccia at home. I've always wanted to learn how to make focaccia and never put forth the effort until now. . I actually just took out three focaccia's from the oven and a neighbor stopped by I gave them one. They had never heard of focaccia so I told them it's this delicious Italian bread.. they tried it and loved it. THIS is so good that I wrapped one up and sent them off with the fresh focaccia... Thank you for sharing your memory and this recipe with all of us.

It’s definitely a lot more labor intensive than most of the other focaccia recipes out there, but damn, when he pulled those out of the oven, you can tell that it’s worth it. Nonna knew what she was doing!

Hi from Indonesia. This is my first time visit your channel. I went to the bakery few days ago and bought Focaccia for the first time. I grew up with rice so eating bread is new for me. Since I moved to Malaysia with my partner from the UK mostly we having bread for meal. But I never buy the Focaccia before. When I ate the Focaccia omg my mouth! Your channel is so awesome. I'm living in germany and tried to get good pizza and foccacia recipes for YEARS. Somehow it felt like no one was able to make a proper dough or the ones able to won't tell you. I've just noticed you put down the recipe in different languages as well! Mate... So awesome! Will get my polish in the fridge tonight (next to some biga I prepared yesterday) and tomorrow, your grandmother’s fantastic looking focaccia will have made it to New Zealand! I think it is wonderful that you shared the pictures of you as a 'wee little one' and the picture of your grandma is so cool. She actually reminds me of my Italian grandma. For Christmas this year I printed up a copy of all of my grandma's, my aunt's, and great aunt's Italian recipes. It came out to 65 pages. My grandparents were from Abruzzi (grandpa) and my grandma was from way north in a coastal small village called Gretcha de Puglia (but not the Puglia way far south). It is not on the map anymore but can be found in a vintage World Book Atlas. I also included pictures of her and my grandpa and many of our previous Christmases. The recipes are painfully detailed so that when I am gone my descendants will be able to make her dishes with as little work as possible. Her meatballs are to die for. Every holiday I make about 50 and hand them out to close friends.

Can Hardly wait for this recipe Vito, when I want pan pizza I make your dough in the morning... then let it sit in the oven with the light on all day. About an hour before I start stretching the dough until it fills the pan. Then top and bake.... it’s a thick pizza that is really Good. I want to LEARN to make FOCACCIA like YOUR NONNA...👍🏻👍🏻👍🏻🍕🍕🍕

no problem do this poolish -400 ml. water -400 gr. flour -5 yeast -5 honey dough -poolish -160gr. flour -16 gr. salt make sure to follow the video for the same results

Did you make it, was it the crust you have been looking for? I grew up with a pizza place that made focaccia pizza in long sheet pans and sold by the square slice. The top was drizzled with olive oil and mounds of chopped garlic with just a touch of sauce and cheese.

My two favorite parts of this video were 1. When you put the microphone down next to the focaccia so that we could hear the crunch as you were cutting it, and 2. When you chowed down on the focaccia after it came out of the oven. Quite captivating despite the fact that this is one of the longer Focaccia tutorials on KZfaq. I've watched a lot of KZfaq focaccia videos and yours has inspired me try your recipe and technique. Also enjoyed your backstory and photos. Thank you.

My grandmother is from Bari and made a very similar recipe. She used to make focaccia here in the states for every holiday. When we were young we would ask what it was called. What she said we heard as ‘forgots’ and she laughed. We always thought she truly forgot the translation. Then about five years ago while speaking with an older Italian neighbor she used the same term. I then was thinking the spelling was ‘fagats’, until now and realize it is fcazz. Thank you! Your memories of your grandmother brought back many many memories of my grandmother. Grazie amico!
