Ingredients: Rice, Chinese yeast balls, water, sugar (optional).
This video shows three variations of non-distilled Chinese rice wine.
Follow the description in the video.
I'll try to answer any questions, eventually.
This stuff is really strong so be careful.
I almost didn't upload this video, but it's been a long time since we have put one out, so what the hey.
This video has taken about 40 hours to upload because of the Goldcoast's shitty internet.
Trying to get an Asian woman video or two out next week, we are very pressed for time these days, and this place isn't good for filming, very noisy, etc. We hope so, no promises.

My rice cooker is small. What if you cook just three cups? How much wine yeast should you put? What if you put the yeast into the rice and cook? And how about the sugar as well?

Couple of things - 1) In place of granulated sugar rock sugar or honey works better as it brings a nicer flavour or even a soft brown sugar. 2) maybe worth spending 3-4$ for a Jam (jello) filter kit which is basically a straining bag and a three legged stand which will let you separate the rice from the liquid with out loosing any and you will get more out.

Thank you! He's a big boy and smart as a whip. Yes, we are gardening, still a passion of ours. We actually filmed a gardening video at our old place before we had to leave, it was about 20 minutes long and to me felt more like a list than an entertaining video. The new garden is smaller, but I might get around to filming it.. It's winter now in Australia so it's a little dry and less impressive than summer.

In Thailand, we make 2 kind of that too. First one is the sweet, we eat all the rice and the very sweet liquid as a dessert called ข้าวหมาก. Another one is like what you did, high alc but still sweet called สาโท. They make from the starter balls but different strains of yeast and other ingredients in that balls.

I have my rice wine cold crashing in the fridge, my rice wine fermented for 22 days when I noticed there was no bubbles anymore, (very little to no bubbles at all) My rice wine now has been in the fridge for two days now and all the cloudy/milky stuff is setting nicely towards the bottom, this is my 4th batch that I have made, and the last 3 times I've made rice wine I kept it cloudy, and it wasnt half bad, had a bit of a bitter aftertaste (still a bit sweet) was very good, got me very drunk, and was very surprised just how potent it was... This is my first time waiting for it to clear before I siphon the clear liquid back into another bottle, so i am looking forward to trying this once it clears! btw I caught your reference to Black Sheep lol (not crud - MUD!!) lol nice video!! I wish there was more rice wine videos out there! The way I did my last batch of rice wine, I did 6 cups of rice and 3 yeast balls, after a week, i cooked up another 3 cups of rice and added it in, it started fermenting as well without a problem, and after another week i noticed the bubbles were slowing, I then added another 3 cups of rice and used 1 extra yeast ball, I then put that 3 cups of rice in a seperate ferment container, waited 3 days until it started getting the very floral scent and then dumped it in my other 9 cups of rice that was already fermenting, that went for about another week and a half (22 days altogether) after the next few days when I checked to make sure everything was going to plan (no unwanted black or blue mold), and noticed it was bubbling like mad! Altogether I used 12 cups of rice and ended up with a over a gallon of rice wine, I am gonna start another batch soon and think I'm going to try another recipe i found, that calls for added sugars/water, and to add in plum during the fermentation to end up with a sweet plum wine.. Do you have any tips for adding plum to rice wine? I would hate to mess up a batch.

Oh, that's awesome! What rice do you use? Yeah, it's so strong, good value really. Good pick up on the crud-mud, I do love Farley. One of these days I'll buy or make a still and try to make some proper baijiu, I don't really like baijiu but I want to play around with it anyway. Cheers for letting me know.

@sarcasmo57 loved the video - but was just wondering what the timeline was for this. Followed your recipe and keep rewatching to figure out how long it took. When you say the glutinous rice & glutinous with added sugar ones took 6 weeks, is that 6 weeks fermenting in the plastic bucket after you added water or in the glass bottles?

Added sugar after about 1 week ( but you really don't need to add any sugar). Bottle it once it stops bubbling. This time will vary on a number of factors like temperature, type of yeast, amount of sugar or rice. You have to keep checking it.

Aaargh, rice I thought I'd watch this one more time before making a start and boiling the rice, and you remarked on the temperature (30c) maybe not being ideal. It's now coming into autumn here in England, and the temp in my flat isn't going to be much above 20c for the foreseeable, Is that going to be too cold for fermentation, or will it simply take longer...?? I brewed a lot of rice wine last winter, and my house was about 20c as well. I found keeping it close to a heat vent or radiator really sped up the fermentation. this type of wine seems to ferment better in warmer temperatures. it will work at 20c but it will take longer

@@johndar297 thanks for your reply. I don’t mind the process taking longer, but not working at all was my only concern. I’m going to have to see how it goes, the heating is going to kick in, if it drops below 17/18c at certain times that is 🙂 I’m hoping for a warm spell 👍

Hi Sarcasmo57! I've made one batch following exactly your video, some questions tho, after i strained it, i got a liquid which i bottled and it sedimented and gave a clear liquid on top and particles at the bottom. The clear liquid tasted almost nothing like alcohol, it seem to resemble vinegar alot, which i researched and it seem that vinegar could be form from the alcohol, any idea on this? How long should i keep it before straining ?

Hi, Crays Loh! It sounds like your brew got contaminated by either a wild yeast or some kind of bacteria. If you can stomach the flavour it then it's probably ok to drink. Don't drink it it if has a disgusting smell. The brew is ready to strain when it stops bubbling or when the bubbling slows down a lot (to be extra safe). If you let it sit after bubbling has stopped stopped it will increase chance of infection. How was the temperature there? I know that it was very hot when I filmed that video but I've found then it's best to brew rice wine in cooler weather.

@@sarcasmo57 Woah thanks for the swifty reply haha, really? Well to be fair here's my exact process. So as i cooked the rice, kept it in an airtight jar, i saw some mold forming on top after like 5 days? and scrapped it off fearing that it could be harmful, and i read that you're supposed to keep the rice submerged, hence i use a spoon to push it down every few days until day 20 where i don't see any more bubbles being formed, i decided to bottle it. some redditor mentioned it could be acetobacter infection, any idea? Does it matter how long i left it in the jar after there's no bubble? do i need to bottle it straight away? I noticed it stopped bubble for like 3 days, but just kept it longer to be safe. Hmmm my country is tropical, so probably 30 celcius room temperature?

Oh I see. Yeah, so the more often you open the bottle the higher the likelihood of unwanted infections. No need for an air tight container, there needs to be a way for the CO2 to escape. White mold is safe other colours might not be. Yes, bottle as soon as the bubbling stops. Good luck for next time!

I got this one from Big-W. Any home brew shop will have them. Otherwise, ebay or taobao. it's called a bottle capper.

what do you reckon the alkohol % is in the wines? is it strong like 30-40? or like a red wine? glad to see the videos :) keep em coming :)

No yeast can take ABV that high. The sturdiest yeasts can take a wine up to around 20% before dying of alcohol poisoning and even then it usually requires babysitting like step-feeding, nutrient additions and degassing. Going beyond that requires distilling.

You can get that yeast in regular packets/loose form. I found mine on eBay.

Yours are quite clear, does the length of fermentation affect the cloudiness of the wine?

No, the time that you let it sit in a bottle without moving it before drinking will effect the clarity. If I shook up the bottle before pouring then it would be cloudy.

I think distilled water is needed for the yeast not to die because if it is purified some of the fungi might die.

Hi sarcasmo, you seem like a cool dude. Would you be able to tell me the alcohol content of the different kinds of wine? You say "strong" but were you referring to the taste or the alcohol?

Hi, thanks. I never test the strength with a hydrometer sorry. In this video both the taste and the alcohol strength were very strong. I have made far mellower tasting rice wines in the past but the alcohol volume is always very high.

brett im losing sleep over something when i make bread without sugar the dough still rise so that tells me yeast can break the starch into alcohol and co2 but with rice wine people always use nuruk or chinese yeast balls that have mold with enzymes to break the starch and i want to make rice wine with only yeast, i figured you might know the answer is that possible or not?

@@sarcasmo57 thank you! i will try to get to a store to buy rice but my village is very remote and the government stopped buses here because of the corona virus so im relying on neighbours for shopping so im in a kind of rediculous situation where temporarily rice is hard to come by for me (not to mention chinese rice balls)

Hi, I don't think it will work as the bakers yeast lacks the mold that breaks down the starch into sugars. Have a try though.

I let it stand upright in the fridge for a few days before opening, all of the cloudiness falls to the bottom of the bottle. Then I take care not to shake them around too much before pouring.

Hey man. Im curious after fermentation & after pouring it in the bottles how many days before yiu can drink it? Also No need to boil it? Tnx man!

Hey Mate. You could drink it at the bottling phase but it won't taste very good. Give it at least 2 weeks for the flavours to settle out. As for boiling, you do need to boil or in some way cook the rice, yes. But you don't need to boil the alcohol. Having said that, I'm working on a ghetto moonshine still, so watch this space. In a few months I will make a video about turning this rice-wine into Chinese baijiu. It's going to be super ghetto, I just have to finish my as yet unopened 1.9Kg can of coffee so I can use the tin.

i got a grean mold after one week, i used regular wine yeast. any idea ????

It may be that the green mold was able to form because there was no competition from the white mold that is included in the Chinese yeast balls? Try again but make double sure that everything is super clean. If it's only a very small amount of mold I would try to scoop it off and keep going but use your own better judgement on whether it seems safe or not. Please let me know what you do and if it works. Well if you don't like the taste, you can always add either some sugar for sweet cooking wine, or salt for savory cooking wine and keep experimenting! That's what I do!!

Hey mate, bakers years will make alcohol if it has some sugar to eat, but I don't think that it will work very well with rice because it lacks the mold which turns the starch into a more usable form of sugar. I could be wrong though. I hope that you can do the experiment anyway let me know if it works?

Rice on its own has no sugar for the yeast to eat. The yeast balls contain an extra organism that converts the starch into sugar. If you use bread to yeast and sugar, you'll end up with weak wine that tastes slightly ricey. Bread yeast has an alcohol tolerance of about 10% abv. Rice wine yeast is a completely different animal than bread or wine yeast. It can go to around 20%. Champagne yeast tops out around 18%. Bread yeast is better used for cider,beer, and mead. Tends to leave it cloudy though.

Hi, Although I love to drink Japanese sake I'm no expert on how they make it. I know that it's similar in many ways, one difference is that they grind away the outer part of the rice grain so that it's only the very center of the grain that gets used. Other than that the Japanese are big fans of using ritualistic traditional methods that the Chinese simply don't bother with. I wish I could offer you a better answer than that.

I know this is not a good answer but- That is the way I was shown how to do it. My guess is that it gives the mold opportunity to grow? The yeast alone will have no problem in a watery mixture though.

I like your video, simple language and simple steps. I am new to wine making, and I am 100% understand what you are talk about. Just one question, where do you keep your wine when they are settling for 2 weeks. You sealed your bottle, how can you sure there is no more fermentation, and cause your bottle explode. Many thanks.

Hi, thanks for your comment. I used 2 balls of yeast to 1 kg dry rice. You can probably use less if you want. I know that I can keep it in bottles without them exploding because I watch the wine very closely for a day or two to make sure there are no more bubbles coming up before putting it into the bottles.

Hi, sorry for my late reply, you might have made this already?? 1 kg of dry rice yields a few of liters of wine depending on how much water you add. You can water it down more to get more wine and the flavour is still pretty nice.

Minimum? If you want it to finish and then drink strait away then a few weeks, Just wait until it stops bubbling. It's quite strong, you don't have to drink much to get drunk.

Hi, Yes, this will work with any rice though the flavour and alcoholic strength will vary. Yes it should be possible to then make vinegar from this. It should be good, I mean rice wine vinegar is a thing. Try it and let me know.
