Thanks for the recipe Eunice! My son's 6th grade social studies class is doing a unit on Africa and he was assigned a project on Sierra Leone. One of the options was to cook a dish from that country, and after some searching we decided to try your recipe. We had to do a little guesswork on quantities of ingredients but it ended up coming out super-delicious! His class loved it, and we'll be cooking it ourselves from now on as well for dinner. So good!

Hi Eunice, you are obviously a great cook. Can you tell us what seasoning you used and how much. Also you did not use any tomatoes. Other recipes do. Is there a reason why? And lastly did you use sage or mint? How long did you bake it for and at what heat. Thank you so much. Thank you.
