How to make these lovely round and fluffy Red Bean Buns. Whenever there is some red bean paste left after making mooncakes, I would love to make these classic Japanese-style Sweet Red Bean Buns!
▷Ingredients for 8 servings:
Strong flour 225g
Soft flour 25g
Sugar 30g
Salt 3g
Instant dry yeast 3g
Egg 1 (50g)
Milk 50g
Water 50g
Unsalted butter 35g
Fillings
Red bean paste 35g*8
Toppings
Egg 1
Water 2 tbsp
Black sesame
▷Suggested fermentation time:
First fermentation 1 hour
Second fermentation 30 minutes
▷Baking information:
Bake at 200°C for 15 minutes

- The amount of water needs to be adjusted according to water absorption of flour, weather and humidity of the day
- In hot weather, use lukewarm / cold water or cold milk or eggs; please use warm liquids in cold weather
- Fermentation periods are for reference only,please adjust according to humidity and temperature on your baking day
