Recipe
14 oz ribeye
Freeze for 30 minutes
Then remove and slice thinly
Add to bowl with
2 tbsp soy sauce
1 egg white
1/2 tsb black pepper
Pinch of salt
1 tsp baking powder
1 tbsp corn starch
1 to 2 tbsp cold water
Mix and marinate 30 minutes..
This step is important as it’s how velveting takes place. Don’t skip it.
Sauce
2 tbsp light soy sauce
1 tbsp oyster sauce
1 tbsp ketchup/ bbq sauce
1 tbsp sugar
1 tbs corn starch
A splash of fish sauce
Cracked black pepper
Then
Mix and set a side
If too sweet add a white/red whine vinegar to cut through the sweetness
Fry off meat and remove from skillet
Then add
2 types of chilli pepper to oil
Garlic
Shallots
Sauté 1 minute
Udon noodles
Light soy sauce
And sauté befoe
Adding The meat and
The sauce we made earlier
With A light drizzle of sesame oil
Add some spring onion and mix once more and you done.
Now you eat.
