John is using some of our grapefruit to make cane sugar free marmalade - using xylitol as the sweeter.
Xylitol is a non-fermentable sugar-alcohol made from birch trees or corn cobs. Yes, it is a refined product, but unlike cane sugar (sucrose,) there is evidence that it reduces tooth decay and is safe for diabetics. It has about 2/3 of the calories of sucrose.
