To get the super fine texture, you need to put the meat in a cold pan and add water. Maybe a cup or so per pound. You mix that together and you'll actually see the individual meat fibers separate. Some people do the initial mixing with a potato masher. Anyways, cook that down and boil the water out. You'll have the finest textured meat you can get.

I use a stainless steel pan with a stainless steel spatula that I put a sharp edge on. After searing the ground beef as it is outta of the package, I go to town like a Mexican by chopping it up aggressively, creating a fine mince. After browning is complete, I add about a 1 and a 1/2 cup of water, allowing the seasoning to incorporate into the beef, coupled with breaking the meat down further via a quick boil down to a simmer for several minutes. Comes out fantastic every time. Be sure to leave a little water for moisture. MSG takes it to the next level.

Try taking out like 10 % of the meat when it is done and blend it with very little water. Thab put it back in the pan. Looks just like tacobell after that

I absolutely could see that! Oatmeal is often used as "filler" or to stretch out the beef in order to make more of the product. Whenever I make meatloaf (or burgers too on occasion) I always add a bit of either dry or fresh bread crumbs. Not only does it stretch out the amount of ground beef, but it also contributes a nice texture to the finished product (at least I think so). As I've heard of oatmeal being used, I've never tried adding it myself. But now that you mention it...

Just add flour to the ground beef when it's done and let it cook until it's thickened then add the water. That'll change the consistency completely.

I canned ground beef and seasoned it with taco seasoning. After cooking it I put it in jars ( Pint ) ball. Then didn’t add water at all but after canning in pressure canner . It took on the texture your getting with water. Ty for this recipe too. We’re on the same page.

I certainly don't want to be a "youtube hater" dude. I genuinely appreciate the time and the effort you put in to creating this video. I LOVE Taco Bell meat and have been trying to replicate theirs for some time. Here's the thing that I feel is missing perhaps - FILLER! Taco Bell puts tons of filler into their ground beef to add both flavour and texture...I've been trying for ages to figure out exactly what that filler they use is but I've come up empty.

I do not think they put filler in it they just over cook the shit out of it, over season it with taco seasoning and replace the fat / grease with lots of water. I do not ad sugar and the meat to me tastes exact.

If you are having trouble getting the beef to grind small enough, try this: Grate frozen ground beef with a cheese grater. Works awesome.

Ooh...I would not have thought of that! What I started doing is once everything is cooked up and seasoned, instead of going directly into the taco shells I've been putting it in a blender/stick blender for a few seconds LOL Not trying to make meat-sludge, so you have to be careful.

Take a hand potato masher while your meat is browning and mash the meat. Add your seasoning and water. Let cook for a few minutes. After that pull it off the burner and add a little more water. Pile all the meat into the center. Take an emulsion blender and pulse the blender accross the top of the meat. Mix it up and there you go. Now you have meat like taco bell. Be carefull with the emulsion blender or you can turn it into baby food. It only takes a pulse on high on each spot, accross the top.

I liked McCormick's taco seasoning before they changed it. Still use it though, just add dried onion diced, and granulated garlic powder. Also, depending on your taste some dried cumin.

Seems to be good advice,I used another recipe where you boiled the meat for an hour,added chopped onion and chopped bell pepper cook for another 20 min,first I added chili powder,cumin,paprika and salt.it’s a long process and I usually do 4pounds and freeze I seperate bags,it’s good but time consuming and I think this recipe might be better

As long as you drain it the cheaper the better you don't want a real steaky beef because the texture will be off. Drain your fat and replace with lots of water and lots of seasoning. The key to it is to over season your meat, and water it down, eat your tacos as you make them or else they will get soggy just like Taco Bell's.

Great video! I would, however, advise everyone to include a tablespoon of masa flour. It adds that "missing" richness, and acts as a binder. You'll like it. If you can't find masa flour, take some plain corn tortilla chips and finely grind them. Works like a charm!

Finally saw some post the most important ingredient is the corn flour. I usually grind up cool ranch Doritos, give the perfect match on the texture. That is why Taco Bell use to be able keep the price so low on the taco. Taco Bell use to be the most affordable fast foods.

Sugar...the "secret" is sugar...not watered down taco seasoning, that's just silly. Taco bell uses three types of sugar and corn starch to achieve flavor and texture.

First of all this is not how Taco Bell cooks their meat, this is how they should cook their meat. This is fresh, they reheat their beef which is kept frozen in airtight bags then dunked in hot water vats to “reheat”. There is no telling when the beef was actually cooked.

I worked @ a Taco Bell decades ago. I read, there, that the seasoning mix included whole oats. When I make tacos @ apartment, the Taco Bell seasoning mix does not have any oats. I have to apologize; I am having tacos tonight.

I'm gonna try this tonight. BUT, I'm going to use an immersion blender with the cooked meat/water FIRST, then add back to pan and mix seasonings in. Wish me luck. If I don't make it back, tell my family I love them. I've been making a pate for my cat hand blending chicken breasts this way recently and it struck me, "Hey, this reminds me of taco bell meat".

it's the amount of seasoning not the type.. Taco bell uses a whole bunch of seasoning and a whole bunch of water and they cook the meat a really long time which makes it the way it is.
