Yum! We used to have a Philly cheesesteak place here where I live and they used to make the most amazing chicken cheese sandwiches! This reminded me so much of those. And you were reading my mind with the tortilla. Very similar to chicken fajitas and of course the mushrooms was a great call. Like you said, you can do so much with this dish. Yeszirrrr So I’m fresh off inhaling my modified version of this recipe. My modification was I added fresh Jalapeños to the veggie sauté! I also marinated the chicken breast in Buffalo sauce prior to searing, sheesh 😂 it was delicious! Top 5 chicken sandwich of all time!

Good I wish people would stop calling everything a cheesesteak. I mean no offense to anyone but have that stuff on there you would not find on a chicken cheesesteak in Philadelphia. Just a Cheesesteak like, you'll get more respect that way. Does look good though.
